Fun fact, intestines are actually very healthy to eat due to being the first line to absorb nutrients in the body. It is high in protein, medium in fact and extremely high in vitamins and minerals, like Zinc that help the body function.

Looking at that red bucket bring back memories. When I was 7 months pregnant with my first child. I wanted chitterlings so bad that New Years. My mom told me she would cooking them if I clean them. I got in that kitchen and stood over that sink from about 7 or 8 hrs. cleaning 5 buckets of chitterlings...lol... We had chitterlings, blackeye peas,collard greens, candy yams, rice and corn bread. Cleaning them chitterlings was a small price to pay for that meal.

My wife is a Thai farmer whose family has lived by eating insects, what the forest grows and yes, all what this lady has stated. Its very nice to know that people are still proud of their poverty & simplicity. That makes for great content. Without a doubt, even though not a very visually appealing video (the raw intestines), a very powerful video that teaches us all the realities of life. Thank you for sharing this. LM

Latvians also used intestines and everything they were allowed to have and we also had to be creative because we too were kind of ''slaves'', but under Serfdom. There was torture at times, but mostly we were more privileged than black folk in US or people in other countries. Anyways, this might be the reason why so many people from different countries will see such food as something familiar and understandable. What counts is the cultural background and the work.

My best friend and my aunt shared a pot of chitterlings one time at her home. They got slices of white bread and hot sauce and just sopped them up. I couldn't ever get over the smell of the cooking process, but boy was I envious of how much they were enjoying those chitterlings.

Well for most of Colonialized American history there was a huge amount of space compared to people. So having cattle was not an issue. And because wild lands were not far away, there was a lot of game animals. So there is a history of a meat rich diet.

Collard greens get a bum rap, they really aren't often bitter. Always, always remove the stem too, just tough and fibrous.
