I would just like to say that I find your videos absolutely brilliant and they have helped us prepare & cook our favourite CTAD My history is that I grew up in NW London & my school friend David Tang and his family owned and run a Takeaway so as a young boy 1971-4 my school dinners were Chinese Takeaway dishes and I loved your chips I don’t know how you prepare your potatoes but your (Chinese) chips are the best

Well, reporting back, that was delicious. My OH licked the plate clean. It is from the suite of dishes like sweet and sour pork etc. What is different about it is the heavy use of black pepper which is very un Chinese and gives it a huge kick. It was marvellous. That is a keeper.

New subscriber here, I have followed plenty of so called "Authentic" Chinese Takeaway style recipes, and they've all been what I consider to be failures. So far, I've copied exactly your beef curry, beef chowmein and pancake rolls. Without the MSG, cos I'm grown up and can make that decision for myself 😉... All the food has turned out spot on. Instead of deep oil We only came across your channel on Monday night as we had been talking during the day about the old fashioned Chinese Chicken Curries and the old Spring Rolls the 10” ones and we also talked about Chinese Chips and how Chinese Chips taste so different to chip shop chips perhaps for content you could fry chips

Not in this kind of batter, you’ll need to make it dry by take it out the wet mix then coating it in more starch then it will air fry well

By the way in Holland we have got no orange squash. It is an inherited 'british' product with its origins from India as I have understood. I will try to make it myself and use it in your sweet and sour recipe. Another extra video for your channel could be how to make your own orange squash since it is not available in a lot of countries.

Never know what I do wrong but every time I double fry it always comes out soggier and I do it at a higher temp….must be doing something wrong but god knows what.cooking this tonight though.

Sounds like your oil temp is dropping too low while frying

@@ZiangsFoodWorkshop totally agree… the one thing you never hear chefs say is when you deep fry anything at any temperature the temperature will drop at least 10 to 15 degrees so if you deep fry chicken at 180 degrees for 4/5 minutes the temperature will drop to about 170/165 degrees and take the cooking time to reach the temperature you need to cook at so the chicken comes out soggy….so I think I’m not stupid ill wait till the heat gets to around 190/195 so when I put the chicken in the temp will drop to the correct temp of 180 but then it burns , I have a couple of probs quite expensive and I only put around 4/5 pieces of chicken in at a time so I’m quite stumped. Love what you do … don’t stop.✋

I've never seen anything by that name around here. Mind you it's food sold by Chinese folk, not really Chinese food in these parts. The nearest good Chinese restaurant is in Leeds by the uni and it's called home. Me and my mate were the only white folk in there the time I went, all the other punters were Chinese students. Horse tendon soup, the lot. And proper Szechuan flavours too.

Yes it will be msg, salt and sugar, mostly in a 2:2:1 ratio, but every chef will have there own ratio, might also very likely be just salt and msg in a 2:1 ratio

Another comment in this video exposed that lazy (or efficient) chefs do uses such a blend which they make themselves. And since working in a kitchen is a lot of work and takes a lot of time this method seems reasonable to me. Do you yourself make use of such a self made salt/MSG/sugar blend?
