Lovely recipe, thank you for sharing. Hopefully Helpful Hints: when slicing meat this thinly, it is helpful to put the meat into the freezer for about half an hour prior to slicing. This firms up the meat just enough to make the slicing easier. By the time you have sliced it and set it aside, it will be room temp once again and ready for the wok. Also, I have recently found that avocado oil is excellent for stir-frying as it has a high smoke point and adds no residual flavours to the dish.

Made this tonight - turned out great, and you’re so right about the Jiaoyan seasoning (I used half-and-half salt and five spice)! It’s remarkable how such a small amount can transform the dish. I appreciate your advice about cooking the meat at a medium-low heat; when I’ve made similar dishes, I’ve cooked the pork belly at a higher heat and it was too tough and didn’t have time to absorb the flavor of the sauce.
