Genuine? The guy is a hack. When he said he went to "theatre school," he should have said he never left theatre school. This was like watching a sketch from Portlandia.

It would be a treat to learn from this man. What a master of this dying skill of cooking with fire. I can only imagine the logistical challenges that could arise while cheffing an event like this. I.e.-wind, rain, fire hazard, etc. The team makes it look so easy. Thank you Eater for putting this out. If the Michelin guys didn’t give him a star yet they should consider it.

Michelin Guide only covers certain cities: San Francisco, LA, Chicago, New York, Washington so outside that area, chefs cannot get stars .

This food looks great. Love the use of the Dutch oven, those trays, hanging pineapples and the hay steamed fish. Great menu.

The whole time dude was like #쌈밥 Ssambap, I was like he can't be talking about doing Korean Vegetable Leaf wraps, and that's what he did. He is culturally aware and way more refined in his culinary skills than what he makes himself out to be. I'd call him a chef for sure.

Also his drop dumpling technique is very similar to #수제비 Sujebi which is a Korean Soup dish made from drop dumplings, but obviously his dish he turned into a dessert; genius.

I think it takes skill to manage a fire and sure, it's solid cooking. But I don't know about innovation. Every tool they used is pre-made, not changed by them. And the methods they use are standard.
