Aunty, thank you so much for your wonderful recipes. I grew up in Durban and left to settle in the UK in 1975. I really missed the curries, samoosas, chillibites etc. that I grew up with and even the Indian restaurants here did not have the same flavours I grew up with. I realised that they are most North Indian cuisine whereas Durban curry is more South Indian origin. So I am really grateful to you because I'm now 72 and still learning how to achieve a reasonable flavour and aroma to remind me of my youthful years growing up in Durban. God bless and thank you!

Thank you for your video do you know if osmans uses cornstarch as a filler or bulking agent for their spices or even lactose powder. Is it possible for you to make your own curry powder, with your own receipe by grinding whole spices, as opposed to using a commercial curry powder.

@@surayagovender2280 hard to believe that is true because mealie meal doesn’t dissolve in a curry and would show up when you cook with it? Sometimes salt is used as a bulking agent so you have to be careful with the masalas you buy

You are most welcome, the mixed masala is something you can play around with and make your own ratios up for your taste so I would encourage you to try different combinations.

For red colour you can use food colouring aswell as Kashmiri masala.Kishmiri is more milder than the Chili powder.

If you try it and it is still too hot you can skip the pure chillie powder. The resulting mix will be flavourfully spicy but less hot!

You could look to add hurdee which will make the colour more yellow. Food colouring will make the masala more red.

Finally...at least I can now mix my own masala. Taste matters. Why would you not mix kashmiri chili powder? How does the taste differ from pure chilli pwoder?

I think partly because we did not get kashmiri as much as we do these days. I think you will need to adjust for heat and Kashmiri chillie powder may also be a brighter red. Will have to compare side by side and get back to you.

The spice I miss the most is birth masala! Please can you share the recipe on your channel if you know how? Chicken curries here are just not the same. Hi Sharm. I'm also in Australia. A lot of the South African shops in Australia stock Taj Mahal spices, and most ship Australia-wide. They might be able to order birth masala for you, if you don't mind waiting for it.

I just came across this video in hopes of learning the basics of mixing various types of Masala’s. I live in Canada and naturally it is quite difficult to get this kind of thing (the version from SA anyway). There are two masalas that I bought from a shop in Durban and they are fantastic. The one is called chicken dust (more a seasoning) and the other is a butter chicken masala. Naturally, they will never give you the recipe. But two things I noticed about these are that they are sort of moist. Not a dry spice really. And they are also quite savoury and salty. Almost like you can use it as a seasoning on meats and so on. No added salt needed. So I was hoping that someone can point me in the right direction as to why it is moist (it litteraly forms lumps) and where the savory and salty taste comes from. It doesnt seem like they just add salt, but I have no idea? Thanks for the video!!

On the saltiness I think it is just salt that is added. For the flavour but also salt is often the cheapest ingredient going into the mix and therefore the more salt added the more profitable the final product is to the manufacturer. I am not sure on the moisture. What you can do however is place the masala on a flat tray and leave it to air out and it could help dry out the masala.

@@GaithreeDeviLuckan Thank you!! I actually spoke to a spice vendor and he told me they mix oil into the masala and that some of the time kashmiri masala has a salt content. If it doesn't, just add your own salt. This helps a ton!! THANK YOU!!

When you are braising you can use less of the mixed masala and make up the spices with garam masala and dhania and jeera powder and tumeric for colour. Alternatively if you have some milder masala available you can mix that into your mixed masala to bring the heat down

Hi we used the mixed masala from Osman's as the base and then added to it. I know Osman's make an extra special curry powder as well - you can use this without mixing any additional ingredients but the mixing is more to get the curry to how we like it. You will also notice when we cook certain curries we add spices when cooking even though we are using the mixed masala...

We basically use it for most of our curries and biryani. Everything from beans curry to mutton biryani😃 We is the mixed masala as the base sometimes and then add additional whole spices. Good morning. How many tsp/tbsp would you put in 1 kg meat for medium to hot curry?

Hi for 1kg mutton I put in 2 tbs of the mixed masala but we eat milder food. I would suggest adding the same but adding in a tsp of pure chillie powder to make it hotter. This is my video for the mutton curry: kzbin.info/www/bejne/rX-phZ-hZqedfZY

You will need to add additional pure chillie powder. If you can get Kashmiri chillie powder it will also work

Could the curry leaves be ground and added as a powder and could fennel seed powder also be added as well. Could you please advise the quantity for fennel seed powder. Thanks heaps

You can definitely add the ground curry leaves into the masala. For fennel seeds I would be cautious - fennel has a distinct liquorice flavour that can become too strong. Add to your taste and adjust over time.
