Hi guys! Always love your videos since I discovered you a few months ago. One idea for the aubergine/eggplant is to roast it whole (poke it first) then let it cool and scrape the insides out and make a middle eastern dip called baba ganoush. Basically the same ingredients as hummus (lemon/garlic/tahini), but use aubergine instead of the chickpeas. The roasted aubergine takes on a smoky flavor when you roast it that is absolutely fabulous. And you can use the baba to spread on sandwiches or add to salads just like you can with hummus. I hope that makes sense😉

Bob, Katie, yay, i miss the van!!!! I adore markets. In Mexico they are a way of life. I'm a very pale faced american with a Mexican better half and our tactic was I would walk up the long row of stalls and see what we needed (and in the huge central market there were dozens of these pathways) I would usually pick the folks who bussed in from the countryside. I went back and reported what and where and he would then go and do his haggling magic (I don't enjoy haggling). We save money all the time, not only on food but clothes, etc. I estimate all I'm wearing now all cotton pajamas t shirt and under-drawers, socks probably cost us @$2,US (@1.57 british pounds). I hate to mention it but the we get 2 kilo bags of those long red peppers (wonky style) for about 80 pence....but we do grow them here. The less said about Sandia (Watermelon) the better hehehe Cheap as chips. Aubergines (Eggplants) I love them. My easy go to recipe is a sheet tray with them cut in pieces along with garlic onion peppers (hot or sweet) and then oil and spice them up (pick a country) and add anything else that needs to be cooked any green veg, even potatoes, just be sure to cut them so they all cook. I check from time to time and remove anything which is done. and you have a low effort delicious meal which changes with the seasons and your fridge contents. Hugs from the land halfway down under on the pacific side...Jim

the scallions have lovely roots. I like having fresh scallion growing on the window sill in the kitchen and I just cut around 3 inches from the roots and put several in water...the ones that start growing at the top in a few days (the green comes peeking out) get put in well draining pots of soil in the window and I have fresh live scallion all the time.

I usually put aubergines in a bolognese or bake them and turn them into a dip. They are also good cut into thin slices and grilled with spices and cheese. Aubergines are delicious.
