Although I didn't show it in the video, I survived every single jump in GTA V without a parachute, no matter the position. It's only when I get the parachute that I die upon contact with water.

As for the water, it all depends on how you land, if you fall in a horizontal position, then you will die, if in a vertical position then not. Therefore, there is a little logic here. Trevor was in a semi-vertical position, so he survived, but took a lot of damage. After all, this is a game.

I must say, as i suspect all clips are made in their resp PC versions, there might be some problems caused by the PC porting from the console versions. E.g, something like 8:15 has never happened to me when i played on console (the swingset catapult was always there tho, lol).

Tbh, I've never seen Niko bounce of into the air like that after standing on top of a car before, so I assumed it was a bug I've never encountered.
