Using food processor to make mayonnaise is probably the best kitchen skill I learned. I have run into situations where we run out of mayonnaise or simply not stocking them, knowing how to make it on the go amaze my friends and fresh mayonnaise by itself taste amazing.

I have been making the ham spread for years. I would recommend adding some green bell pepper before you process. It goes so well with ham! Good on toasted baguette or as a tea sandwich.

surprised you are using a food processor for the first time. I use mine all the time specially for pesto. The dips look amazing and will be trying.

Good video. Often the instruction &/or recipe books that come with new kitchen equipment are either very vague or the recipes not well thought out. But one of the handiest gadgets I've bought for the kitchen in the last couple of years was a mini-chopper. I have a big multi-tasking food processor, a liquidiser & blender, but they're quite big so tend to get stored in the pantry They either don't do tiny amounts too well or once you've dragged them out, set them up, Used then washed & put away - it's not worth it. So they're reserved for bulk tasks. But the mini-chopper is small enough to live on the worktop & handles small amounts so well. As you say, they're so quick, so I'll make a quick mirepoix/sofrito, or decide to knock up a mayonnaise or other sauce. Plus they're pretty cheap, mine was about £20. So excellent showing everyone how useful they can be.

Thanks Stephane, indeed some of these appliance cookbooks have some interesting things now and then, there's always something to learn from them. On the tuna rillettes, I wonder how feasible it would be to add an egg to it and maybe a pinch of toasted flour to bind it, ball them up & fry some tuna croquettes. Which in turn may be tasty with the other sauces you made (especially the mayonnaise).

Great Football Food! The Superbowl will be here...Okay...Thanksgiving and Christmas and New Years appetizers too. LOL! We like to nosh during football though. I want to try them all. I will have to try the fennel one by myself though...my family won't go for that one. 😉

6:50 - well you can’t do this (tuna rillettes) in a big blender (like I did). Not enough tuna to make this swirl around, and because it’s not enough liquid it will stick to the container leaving the knifes spinning around without cutting/mixing the ingredients. For that tiny portions I’d guess a standard "top-down" smoothie blender works best as gravitational forces will help to drop the content downwards into the spinning knives. HTH BTw, adding a drop of lemon juice… oh, yeah (and I used Joghurt & Mayonnaise bc I had not Crème Fraiche at hand). Guten Appetit 👊😀👍

I've always been intrigued by "crème fraîche", which means "fresh cream", but it's not fresh cream :P It's more like a lighter sour cream. C'est un peu drôle.

Is any country except France have cream fresh? What is it? I know there is cream, heavy/double cream, sour cream, yogurt, buttermilk and different cheeses but what is cream fresh?

You can find it all over Europe, crème fraîche normally is a higher in fat (30%+) and less acidic version of sour cream. Might change taste slightly, but you can pretty much substitute it with sour cream, at least outside of baking.
