Loool. Trust me. I used to work for a local council, advice and support. The white staff used to often come to ask us to help thrm out, from the main advice centre, when the Caribbean elders had an issue and were getting frustrated. When I turn up, they were not actually agitated, just speaking at their usual loud volume. Ha ha. My friend and I that used to work together always laugh at those times, some 25 years ago.

You have to know how to cook first of all to cook any food. You really have to know what the food is suppose to taste like. I’m Jamaican and we all cook different and use different spices according to which part of Jamaica we come from. So there isn’t one way to fix brown stewed or Fricassee chicken. We don’t even eat this very often. These dishes people think that Jamaicans eat, we eat rarely. We cook and sell to non Jamaicans. We eat more things like flour dumpling, yam, boiled banana, breadfruit, cassava and things like that. We don’t eat that stuff you see in Jamaican restaurants on a regular bases. We eat the same foods like Africans. Food from the land except people in Kingston.

My house smells great right now! Had to improvise on some of the seasoning but I had the main spices and browning. I had a lot more gravy . I think it was an old stewing hen and the chicken gave off a lot more juice. Because it was an old tough bird I also increased cooking time by about 15 minutes. Thank you for this recipe! I’m trying to give the family a variety with my freezer full of chicken!
