Retired cook here...If the ginger is going to be "seen" (i.e. teriyaki sauce, desserts, etc) then I take the skin off ... if the ginger is young and the skin is tissue-papery then it's ok for cooking as is. If thick skin/old ginger I scrape the skin off with a spoon. Weirdly I love putting a slice of fresh ginger in my creamed/sugared coffee... it's delicious. p.s. You can keep fresh ginger in the freezer for longer storage. Works great. Thanks again Beryl and her team for another fun episode.

@@irishpixierose Oh it's so good in sweet creamy coffee ... candied ginger works for a shelf stable option. It's a nice alternative to chai which is too strong/too cinnamoney for me. To freeze I would slice thick planks on a tray then pop into a zipper bag. Toss if they get freezer burned so use it quickly. Glad I could be of assistance :-)

You can keep ginger fresh for literally months if you keep air away from it. I use my vacuum sealer to seal my ginger and then throw it in the fridge. I haven't had to throw away ginger since I've been doing this. I can buy a big knob of ginger and it will keep for months.

omg i forgot to submit my grandmas recipe for chicken wings!!! my grandmas from the kaiping toisan area of the guang dong province of china. her wings are what i can best described as smothered in this thick gravy with caramelized onions. she use a combination of light soy sauce, dark soy sauce, chu hou paste, sugar, shao xiang wine, and maybe some five spice to make the sauce. unfortunately she passed away last week, so i won’t be able to know for sure how she made it

cola wings is a perfect beginners dish for learning to cook Chinese food. For a very simplified/idot proof recipe: pan fry 1 lb of wings with ginger until it’s golden crispy, add around 2 tbsp of soy sauce and half bottle(around 1 cup) of cola, DO NOT USE DIET COKE. Simmer and lid on for 15 minutes after boiling. Finally take off lid and crank up the stove to reduce the sauce til sticky.

Hi Beryl, it was such a joy to be part of this episode and community! Thank you for sharing about buffalo wings from Upstate NY. I’m super excited to try the rest of the recipes from this episode, too! One note about buffalo sauce is that you can get bottled buffalo sauce, but it tends to be mild and the bright, spicy, tangy flavor is muted by additives and thickeners like cornstarch. They also often contain “butter flavor” that is not as rich as the real thing. If you make buffalo sauce yourself, you can adjust the spice level by adding more or less distilled vinegar; more vinegar makes it brighter (but not more sour) and seem more spicy without setting your mouth on fire! Most hot sauces already contain vinegar, but an extra splash significantly changes the flavor. You could use a hot sauce with a higher concentration of cayenne pepper if you are going for a more intense heat, but that sacrifices flavor. I think the ideal buffalo wings aren’t just spicy; they are flavorful so you can taste the chicken as well as the components of the sauce. Frank’s Original Red Hot is my favorite because you taste the sauce, not just feel the heat. I hope everyone gets a chance to try this recipe at home. Thanks again!

Adding vinegar makes recipes like this LESS spicy, not more. Capsaicin is oil-soluble and butter is added to this sauce to spread it around. The more fat, the more capsaicin is dissolved in it. Acid (lemon juice, vinegar, etc.) breaks up fat molecules and thus the amount of capsaicin that is dissolved. Vinegar is added to this dish (by some cooks, it’s not authentic) to highlight the buttery flavor that it contrasts with, the way you add salt to desserts to highlight sugar. When it comes to Buffalo wings, you simply add powdered cayenne pepper to the wing sauce to make them hotter (and add more sauce).

I'm an older lady so I remember when they used to give them away free in the grocery stores and butcher shops back in the day. I live in NW PA not far from Buffalo so every bar worth their salt serves wings here. I love them and could eat them a few days a week if given the chance. Flats for me! It's all about the crispy skin and sauce and not so much about the actual meat and the flats have the perfect ratio. Fun episode!

One of the things that is so interesting about all of these recipes from all over the world is that, with the exception of some specialty items, most of the ingredients are readily available. There may be different combinations (and amounts) but it would seem that a lot of humans eat a lot of the same foods and spices. That has been really eye-opening.

Thanks for this. Would you ever do a show on chicken thighs, as you can do different things with them than wings? What I do sometimes is too simple to even call a recipe, but it can be fun sometimes, and is good when you have a bit left of many jars in the fridge. I use a muffin tin with very large cups. Line it with foil, not paper, cups and add one thigh to each cup. Then brush each thigh with a different sauce or seasoning; bbq, chili, hoisin, black bean, pesto, honey mustard, soy and ginger, teriyaki, enchilada, garam masala, jerk, parmesan, whatever you have or can make. Use as many colours as possible. Bake according to your oven.

Letting the fire burn and produce nice coals is the key. The coals will provide a more uniform heat that can be controlled more easily based on how many coals you want to cook over. No worries. Not a bad first effort 👏🏻.

This was an AMAZING episode! I tried every single recipe and loved all of them! I make protein bowls and I get tired of the same food all the time, so this episode was absolutely perfect! Butter Chicken is a food group for me so the first recipe had me ecstatic! I served them to my partner and he said "Babe, if you keep cooking me stuff like this, you might find yourself married before long". For me, ginger skin on skin off will depend on the age of the ginger. The older the ginger the more barkier it tastes. It doesn't taste like ginger. So the younger or mid aged ginger are ok with skin on. It also depends on the recipe you are going to use it on. It's harder to smooth ginger in a recipe with skin on. A tip, if you do need to take the skin off. Peel it and place it on a Ziplock along with your left over vegetable peels and leftovers for an end of the week soup. Just make to wash it thoroughly and dry it before freezing it.

When we make buffalo chicken we do it as tenders. Cut up chicken breast, flour-egg-italitan bread crumbs, and fry them up. Then toss them in a Butter and Franks mixture and serve.

one of the reason we use coke for chicken wing is for the color. in chinese cooking 焦糖色 brown caramel are used a lot to color the food. coke is already colored and it has sugar, so it saves a lot of time and effort

On the subject of celery, try wrapping it snugly in cling wrap and it will last for ages in the crisper. Then either cut down from the top across all the stalks, or unwrap and pull off as many stalks as you need and rewrap 😃

These recipes look so tasty! I tend to remove the skin from ginger when I cook with it, because there's a lot of people with food sensitivities in our house, and for one in particular, textures are a big trigger (seeds from peppers, ginger skin, any gristle or fat on meat, etc). I tend to play it safe when I cook and try to have the textures be as predictable and consistent as possible. It's odd how food sensitivities work. I'm talking about sensory stuff, but we also have allergies in the house which makes it even more challenging. Some people in my house have a very limited list of foods they can eat, others have specific versions (yellow and orange bell peppers are OK but green and red are not), and others can't tolerate bland food or their body has a physical disgust reaction.

I really like the way chicken wings usually taste, but I hate dealing with the bones, so I rarely ever eat them. I also eat ribs even less often for the same reason.

You can also tap your jar lid a few times on each side of the jar on your kitchen counter and just twist it off ..if you don't have a jar opener lol..love this video.. great video as usual ❤

I worked at a Pizza Shop in Buffalo and made wings. You did great. Basic is best. Only at the shops they are deep fried. They fry faster, get them out the door. Oven works fine at home. Now if you fry at home you have to get the oil hot. 500 degrees. You want the skin so crisp it pops. The combination fryer/steamer/etc I had did not get hot enough. Crappy wings. I do them on the stove in a fry pan at home. Messy but necessary. Oven is easy at home. I never order wings when a place first opens because it takes awhile to get the oil hot enough. I try and avoid peak times too as constantly cooking wings lowers the temp of the oil.

At last another buffalonian! Hi neighbor! I love chicken wings and drums and flats equally, and I love them fried to a crisp and then charred on the grill. All of these are super inspiring. And yes, Beryl! Bleu cheese!! Also the cola recipe was the most surprising

If I had to rep India with wings it would definitely be Drums of Heaven, Indo Chinese (a cuisine of its own imo😅) with loads of Chilli Garlic sauce. Was my staple in college.. Good ole days~

I would have like to see Ghee Roast! Its not specifically made with wings but it can be made with wings as well, and it's the most delicious version of chicken I've ever eaten.
