The "no condiment" thing is an outdated gimmick. There is a reason they don't use "actual cheese". It was tried and discovered the cheese never stood up to the heat generated by the oven. What makes you think that their rather sharp cheddar cheese spread is cheap, just because it's spreadable ? in any case, it's the meat flavor in this, not to forget the flavors from how it's flame-grilled that are the two secrets behind why it's a huge success, it's the 5 different freshly grinded meat cuts they use and then the upright cast iron broilers from 1898 that do the trick. These are not steam cooked frozen patties of cheap meat that need a lot of ketchup and different toppings to make it taste good. Ketchup would surely ruin the flavor.

To make it even funnier. Nobody knows the real story. The common story is that a german salesman from Hamburg immigrated to the US and sold a bun packed with meat. The hamburger as you now know it (lettuce,cheese, tomato etc) is pure american. So yeah, the inspiration comes from Hamburg, but the hamburger isn't from Hamburg. Some claim the story like this diner and use it as a sellingpoint. But nobody knows for certain.
