I had this in an Italian American restaurant. It was good, but it is rich. I didn’t know it was a thing. I used to make veal parm (back decades ago when I could get veal cutlets) - it seems it is now extinct , or at least, out of vogue, even in the best meat markets in the SF Bay Area. Definitely an item to order in a good restaurant.

Steve I really love your channel. The veal pounded thin and breaded the way you do it in this video is the authentic way of making a true German schnitzel. I can only imagine how great this veal parm is! Great recipe!

An authentic jagerschnitzel is one of the most delicious things I've ever ate. It's the signature dish at Zum Stammtisch in Queens and it is amazing.

All I can say is, I finally broke down and got the 3-quart saucier he always uses on here and I love that thing! It is my go-to pan.

Probably the tomahawk veal also. We bought 2 1/2 pound cuts. It was over $100. It was a superb recipe! No doubt about that but holy smokes I could’ve bought an entire beef tenderloin. It was worth the experience. Better than any restaurant!!

@@BillBraskyy I thought he said veal parmigiana I’ve never heard of pork parmigiana but it couldn’t hurt to try. Follow the same recipe and you’ll save $90! I look at it like this, if I go to a restaurant now days I will spend that for sure after tip. The food will be so so. Just make your sauce in advance it will save so much time. It’s a quick recipe. Thanks for your comment. I’m going to try pork in the future!😀

@@NOTANOTHERCOOKINGSHOW You are far from dumb Stephen, more like gifted, especially when it comes to understanding and preparation of the finest dishes. Everything including the name of the dish said veal, but I always think of veal being tender, so when you accidentally said pork 20 seconds in, and what needed to be done to this piece of meat, I thought that makes more sense because pork is tough,lol, where the mind goes ehh. Thanks for getting back to me.👍

@@duboisad The pork chop will be fine, but probably a little dry and tough. I make pork schnitzel, so it should be similar. Veal is much better.

@@sappyjohnson why would the pork be dry though? As long as you don‘t overcook it it‘s fine, look at all the pork schnitzel or tonkatsu recipes. They aren‘t dry either

Looks so delicious! That is a huge piece of veal. I would make this but use something smaller, so I get more pieces that all have the crunchy edges. Love crunchy veal parm.

There's a great place on Corona Ave in Queens called Parkside restaurant. That's where I had this dish and I LOVE IT !!! WISH I was back in NY to try this one. I guess I'll just have to make it

I grew up in NY in the 1960s-70s. Nobody at that time had ever heard of that quintessential American dish "Chicken Parm". It didn't exist. There were two parmigiana dishes. Eggplant parmigiana and veal parmigiana. Every pizzeria in NY served eggplant parmigiana heroes and veal parmigiana heroes. If you weren't getting pizza, that's what you got. Veal parmigiana disappeared somewhere between the mid 1980s-90s. You couldn't sell it to the rest of the US. "Oh, those poor baby cows." If you want to sell food in flyover territory, it has to be chicken. And so, "Chicken Parm" was born.

mozza in europe is mostly water. In big stores you can get "grated mozza" which is dry but has no taste at all. How do you dry your mozza?

In the UK you can sometimea see it online sold as "Block Mozzarella " or "Danish Mozzarella", but usually in sizes intensed for commercial use rather than domestic, with a price point around £/€20 give or take. Sometimes it's sold as Fior di Latte - which is a style of the same method as mozzarella but not made with buffalo milk & lower fat. But usually it's the fresh rather than dried version being sold.

Unless sharing the one chop - with great difficulty, I can’t rightly see making more than two chops - at most, due to availability of proper pans and also, servings, due to lack of having more than one full-size oven in a standard, residential kitchen

I'd personally remove the bone. I don't think it adds anything and just gets in the way when cooking more than it helps (yes it makes a little handle).

Barely veal, cow must have been nearly 3 years old. You cannot get quality veal in the US. The Italians used to love their milk feed veal which was white in appearance.

Veal is pretty much a myth now. The concerns about mistreatment of the calves have made it politically incorrect, and it just isn't offered for sale anywhere except maybe specialty butcher shops where I live. And we don't have many butcher shops other than what grocery stores offer.

It's because there's almost no demand for it, in the UK male calves are often euthanised at birth rather than bother to rear them for veal.

I am confused. Just like I was when I watched the Emilio’s Ballato vid. In that you and Anthony call it veal….but it a pork chop, not baby beef. Why do you call a pork chop veal?? Veal talk. I’m just out here on these streets tryin to keep it all the way veal.

Bro, just remove the bone. It was in the way the whole time you were preparing the meat and added literally zero flavor to the dish since it was hanging out of the pan. The only cooking it got was 2 minutes under the broiler. What's the point?
