Katsuo, or skipjack tuna, also known as bonito tuna, is a popular fish in Japan. Tokyo foodies experience kastuo in two phases: early katsuo and late katsuo, commonly called hatsu-katsuo and modori-katsuo. Through enjoying the difference in texture and taste, people feel a hint of the seasons.

I believe skipjack tuna is the fish, which bonito (which is also called katsuobushi) is made of.
