Certified Angus Beef ® brand Chef Michael Ollier explains how to broil a steak.
In many ways, broiling is like grilling: it cooks with high heat on one side, and then the other. In broiling, however, heat comes from above and the meat sits on a perforated rack in a pan. Broiling is a simple and convenient way to prepare many cuts of beef, like London broil.
Broiling is similar to grilling, except your favorite Certified Angus Beef ® brand cuts are cooked on a pan in the oven. Make London broil something new.
Here’s how to broil beef:
Always preheat oven
Brush beef with oil and season
Use a pan with a perforated rack to maintain even cooking and air flow

I worked in the meat biz in many capacities, starting out as an apprentice butcher in the late 70s. CAB brand is honestly the best USDA choice beef in the country, they have highest specs in the industry, no dark cutters, even marbling without corning (big fat pockets within the muscle), no bruising, always consistent in quality. There are plenty of other black angus programs, but none really come anywhere close. Years ago we ate steak at home until it was coming out of our ears, now we only eat it occasionally, so CAB is all I buy. I don't mean to sound like a commercial, but it is that good. I'm glad to see it more and more meat markets throughout the country.

Here in Australia we generally don’t use the word “Broil” and what was shown is called “Grilling” here.. I live and learn

I wonder how many people have ruined their steaks using his temperatures over the past 12 years? Rare is 1:20 to 130, medium rare is 130 to 140 medium 140 to 150 medium well 150 to 160 and well is 160°.

According to my oven thermometer, "broil" ranges from 500-600 degrees F.

I broiled my 2 1" steaks just like you said and one of them came out perfect and the other one came out rare. So, put it back in the oven under the broiler for a few more minutes and it got a bit scorched. I guess I should have done each steak separately.

Flipping and recentering is important to cooking steaks evenly. Never cook 2 different kinds of steak at the same time in a oven.

When you have a "custom broil" option on your stove, what temperature do you set it to for beef sirloin steak? Also, would you use the same temperature for chicken breast?

dont broil chicken breasts fry em up - coconut oil -panko bread crumbes - seasoned flour - you'll thank me later Dont forget the cayenne and rosemary with RAINBOW PEPPER lol

Should specify that for anyone with a regular electric oven that doesn't have a special broiling compartment, you usually want to leave the oven door open while broiling.

My electric Samsung stove says you have to keep the door closed when broiling or the stove will shut down after two minutes

i find it best to just salt the steak or put a rub in it..pepper usually burns in a broiler right away.

Thats why you slather olive oil on every steak with salt or pepper i guess what ever rub you deem fit. But i use olive oil every time to prevent that.

“Broiler” is the temperature. There is only one temperature when broiling. Most(or all) chefs go by temperature or feel instead of time.

They are a bit different. Pan Broil is a cooking technique used for thin steaks generally. It is a dry cooking method done in a frying pan on top of the stove with no added fat or liquid. It sears the surface of the meat, sort of like proper broiling would. A method of cooking using direct heat, which is much like grilling except that the heat source is over the food instead of under it. Unlike methods that use cooking oils, such as frying or sautéing, Broiling uses a broiler pan and the heat source in the broiler to produce a crispy outer surface while still allowing the interior to reach a required degree of doneness as well as retain juices without drying out. When you select broil on your oven that is all that you have to do. Only the top heating element of your oven heats up. Broiling is cooking with heat from above only. Broiling temperature is the highest heat that your oven puts out.

You're telling each person not to touch 'raw' meat, to wash cutting boards, utensils etc. Yet you are only cooking the meat to med raw. 80% raw. Do you realize how comical that is. Med well, maybe but when it's still bleeding, it's raw.

This is a horrible guide and a horrible result. Those temps are ridiculously WRONG and that finish is terrible. I hope nobody is unfortunate enough to ruin a good piece of steak using this guys methods.
