When I watched the initial part I said to myself this man uses many traditional Japanese carpentry techniques. Then at 5:00 the truth revealed he was a carpenter originally. The prides, skills, and dedications of Japanese people of whatever their profession are infectious. There are much more than what meet the eyes designing and building a Yatai like this. The steel chassis design and construction must be one that was developed and improved over generations to be strong, but yet lightest possible, like the rest of the Yatai as it has to be moved, sometimes over a long distance daily without constantly requires repair. Just the thoughts that went into the design and construction to withstand rain, and worse strong wind during inclement weather are not trivial. The old steel parts sets off beautifully against the exquisite carpentry and, in a small way, Japanese architecture and aesthetics.

Yes, a lot of Yatai are used over many many years, and passed down or sold to next generations, so it's not an everyday thing to built a new Yatai!

I wish I knew how to build a 屋台. Even knowing that he build it with the mindset that he has to use cooling units, gas stoves, sinks or washing equipment is astounding. I am trying to search through the internet to find some sorts of blueprints on how ot make my own ラーメンの屋台 and thinking about weather conditions, transport, standing permits. Hats off to you good sir~
