I love to can cherries because freezer space is often limited at my house and a basic canned cherry is so easy to add to my long-term food storage. I enjoy having canned cherries on hand in my pantry because there are a number of different ways to use them later. This preservation method for cherries couldn’t be simpler and allows you to easily add this yummy fruit to your long-term food pantry.

How to Can Cherries
The following directions will make a 1-quart jar of canned cherries. I love how easy it is knowing how much is needed for 1 quart. Then I can just calculate how many quarts I want and prepare accordingly. For me, it’s generally a water bath filled to capacity.
The first step is to wash and pit 2.5 pounds of cherries.
Next, use a jar funnel to fill your hot jar with the pitted cherries. Top the cherries with 1/3 cup of sugar and fill the remaining space with boiling hot water. Leave a 1/2 inch headspace.
Place the lid on top of the jar and add the ring. Tighten the ring to fingertip tight and process in a boiling water bath for 25 minutes if at sea level. (Remember to adjust the pressure for your elevation if higher than 1000 feet.)
Once your cherries have completed the appropriate time in the boiling water bath canner take them out and sit them on the counter for 24 hours to cool and completely seal.
If your jar of canned cherries did not seal then place it in the fridge and use it immediately. Store the sealed jars in your lovely pantry to enjoy for the next 1-3 years. After three years the nutritional value of canned food diminishes.

Hello from Australia ladies and a new subscriber :) How long would you water bath for if you were to use pint jars and also how much sugar ? Thankyou

The sugar will use the same amount because you are not altering the recipe you are just putting less into each jar. You decrease 5 minutes for each size of jar you decrease. On this recipe we used quarts at 25 minutes at sea level. To drop to a pint you remove 5 minutes and process for 20 minutes at sea level. Remember you need to adjust for your altitude. Your wrong about sugar and salt being a preservative in canning. Canning is the preservation method not those additives. But good quick way to can thank you.

My favorite way to juice cherries is using the steamer juicer like we did in this video: kzbin.info/www/bejne/roaUlKyZlL99ndU That juice can then be made into jelly. You can make jam out of the canned cherries by either mashing or blending them up. Often we use the liquid as a juice or to make homemade popsicles since it is so sweet.

Some people choose to do it every time and there is nothing wrong with that but we tend to wipe and debubble as needed. It works well for us but you can choose the best way for you.

i added the sugar but it all fell to the bottom while I was canning them. is that going to be a problem? trying to think of how i could break it up without opening the jars

As it sits on the shelf it will dissolve into the liquid and be fine. The only time I have had any issues was if I used it within the first 2-3 weeks of canning it and then the top fruit were less sweet and the bottom ones were very sweet. Osmosis will help for this if given enough time.

They are soft, like a canned peach. My favorite thing to use them in is smoothies. Milk, plain yogurt, cherries, a frozen banana and maybe a little vanilla. It tastes so good.

After the cherries have sealed well in the jar, they can be stored in the pantry.

We do pit our cherries but I have heard of some people canning them with the pits. It is a matter of personal preference.

Why not actually make a syrup to control the sugar to water ratio? Here’s a hint 4 cups sugar to 8 cups water. Bring it to a boil, fill your jar with cherries DEBUBBLE adjust head space & REMEMBER to always wipe the rim. Quick doesn’t equal efficiency
