This brings a little sadness to mind, along with a lot of smiles. This reminds me of Grandma, who passed some years ago. From her large orchard and gardens, she canned enough fruit, vegetables and jellies to feed the neighborhood. Mom too had done this, but rheumatoid arthritis slowed her down a lot, so it's the many visits to Grandpa and Grandma's that brings back the memories of going down into the cellar and Grandma trying to get us to take something home with us, nearly every time. Back then, she was making a lot more than canning, she was making a lot of great memories. Thank you Christa, for taking many of us back to those very good days!

My mom was going to teach me how to can, but she passed away before she could. Thank you for making this video. I'm going to try and do it and hopefully she will be here in spirit and be proud of me for trying.

Oh Christa, do I have a tale for you! I was the tomboy-girl on my parents ranch, horses, cows, cowboys?? TO THE MOON!!. How I hated when I got snagged for kitchen work. 65 years down the road, you are talking to the biggest canning fanatic you ever met. Peaches tip coming up... if you put your peaches in the freezer overnight then toss them (frozen) into hot water, the skins slip off so easily if you blink you'll miss it. Absolutely blows your mind. A friend showed me this and now I can til the world won't have it. Just thought I'd bring you a smile to happy up your day. Never say NEVER... Huh?

I'm new to this and I'm glad I came across this vid and comment always willing to learn, thankful for the advice. I remembered growing up eating canned foods but never knew the reasoning for it or how it was done until I started gardening.

I love how you share God's word and much lost information to younger viewers and others. Now I would like to share something with you. About 45 years ago and older women shared a secret with me in Canning peaches. If you put a pit in the bottom of the jar before you put the peaches in you won't believe how much pressure your canned peaches taste! It will almost always get you a when at Fair competitions! I have taught quite a few people how to can but I find that many just don't want to do it or have never heard of it. I wish you luck with your blog and you're positive sharing.

Agree ! 1 pit for pints & 2 for quarts. It really makes a difference...have been canning peaches like that for years.

I used 45 peaches and came out with 2 batches. 7 Jars times two. Great, and tasted so yummy!🌸

We can one to two cases of peaches every year, some in light syrup, some spiced, some pickled, and some preseasoned for peach cobbler. We peel our peaches instead of blanching them because we boil the peels and use the resulting "juice" to make peach syrup, my favorite on pancakes, and peach jelly. Also, you can crack the pits and soak the kernels from inside of them in vodka for several months which results in almond extract. We try not to let things go to waste if we can help it. BTW, love your videos.

Thank you so much for this video! I am afraid that home cooking and canning is becoming a lost art. Most of this new generation can't make anything that does not come out of a can or box. thanks for this. I retired and bought a place in the middle of SC peach and strawberry country. I remember eating those as a child. Also if you have some left over, you can freeze them in freezer containers instead of canning. Makes an awesome treat when they defrost enough to break off a really cool peach (yep, childhood memories of the treats we use to get.) Also thank you for spreading the Word on your channel

I don't throw away those lids. I use them for dry canning and for craft projects. The regular lids are a perfect size to use as a base to make plates for 18 inch dolls for instance. I've never made the syrup with honey. What a great idea.

I'm Diabetic, I did the same thing as you in my canning process except my recipe was a little bit different. I used Welch's 100% frozen concentrate White Grape juice or 100% Pear juice. In doing this a diabetic can use 2 fruit exchanges per serving when eaten. You add only 1 can of water and let the rest be concentrated juice. I also added cinnamon to my mixture. You can also add a 1/2 of a cup of sugar if you desire. I also used this mixture for my fruit pies and to put fruits in the freezer, to can or make jelly or syrups later. To thicken it for pies or syrups I used Arrowroot powder or cornstarch.

For canning never use regular cornstarch. Always use clear gel. It is a modified corn starch and holds up to the high heat!

I too started canning about 60, never too late. Now i try to can as much as i grow. My family made applesauce each year but only remember the crabapples with cloves canned. This week, i bought big box of peaches and will attempt peaches no sugar or a dash of maple syrup in each pt jar. This way you know exactly what is in the food you are eating!

Loved your video!!! Very well done! I'm thinking i need to can some peaches!! I remember my mom doing this in the old wash house using a wash kettle. We build a fire under the kettle which was incased in bricks. since the kettle was round at the bottom my dad build a wooded grate to hold the jars of peaches. We added more wood under the kettle and got the water to boil and mom set about 12 jars on the grate, that's how i remember canning peaches, green beans, pickels, even meat, meatballs, roasts! then we made trips to the cellar to store all of it for the winter. Amazing how you brought all those memories back this morning. Thank You and happy canning!!

Great video for the first timer canner (that is me)! First peaches are in here in NC and we purchased a bunch to can. Unfortunately, they cling to the pit but I am just cutting around the pits. They are not pretty by any means but they as my husband says they are for eating, not looking pretty! Thanks for the canning lesson!!

Wow, yours came out so beautiful. The peaches you got looked perfect. I did this for the first time this summer and we got free peaches from our friend but they weren't the prettiest. They haven't pruned the tree or anything and most of them fell to the ground or were there for the animals. But I picked a load of them and I'm pretty happy with how they came out. The first batch I did is a little discolored now, I think I should have left them in longer, but I don't think there's anything wrong with it. We'll find out soon enough. It's definitely nice to be able to put food by and get a little stock pile going. I've started asking other for any unwanted jars so I can put them to good use and I've gotten a small stash of them now, but I feel like you can never have enough.

That is wonderful! Even after the canned peaches turn a bit darker in color they are still scrumptious! :)

Did you put your Peaches in just a 20 minute wster bath or did you pressure cook them? In our first try with Peaches my husband pressure cooked our peaches for ten minutes. They turned brown. They tasted fine just looked ugly. So I put them in chicken and Turkey and sauteed them with onions and put them over pork sometimes with balsamic vinegar.

This year our peach tree is loaded with fruit and I'm scrambling for ideas to preserve them! I like that you use unbleached sugar and raw honey for the syrup (I harvested 4 quarts of the most delicious blackberry and pennyroyal honey from an abandoned wild hive earlier this year) and I'll try the idea in the comments for putting a pit at the bottom of each jar before canning too :) Love and appreciate you and all your videos

Theres nothing liked home canned peaches. Tomatoes, or beans. Once you get use to eating home canned, you'll never want to eat a store bought can again. Those peaches are so beautiful. Yummy ! I've canned since I was a young girl, helping my mother. We had such fun, now my mother has passed , and I miss her so much , but as I do my canning , I have those lovely memories of our canning days together. They are such a blessing. And oh the aroma of peaches. They smell so good. This year I've had a hard time finding peaches. We didnt even have our farmers market or stand that even had peaches. They sold tomatoes, water melons, cantaloupe, cucumbers. But no peaches. Why I dont know. So I didnt can peaches, this year. Even the store peaches didnt look good at all . We will sure miss them over the winter. I did tomatoes,& salsa beans & froze corn. Did a few refrigerator pickles , the produce in the stores hasn't been good lately Maybe its the weather. Even our neighbors who have a huge garden said their vegetables didnt turn out too good, for the last couple of years. They usually just give us their produce that they grow. All kinds of squash , tomatoes,. cucumbers. I enjoyed your canning video. And always love the verses of scripture, that you share. The proverbs has such wisdom. The whole word of God is wisdom. How blessed we are to have Gods word. May Gods blessings be upon you always. Psalm 33:4 For the word of the Lord is right, and all His works are done in truth

I never thought about putting my Jars in the basket like that before putting them in the caner, I always set the basket on the rim of the caner and set them in there one at a time,, I like your idea better it saves a step..lol.. great video, praise God...

I'M LOVING THESE VIDEOS!!! I CAN'T WAIT TO TRY THE CANNING! I had a good friend that used to make "chili sauce" and can it. It was wonderful! I know she used tomatoes and cloves. She verbally gave me the recipe, but I don't remember it and she has since gone on to be with the Lord. If you have a recipe for "chili sauce" please post it! You can use it on meats, eggs, etc. It was wonderful and not spicy hot.

I enjoy your videos. I have a couple tips for you and your fans. You do not need to sterilize your jars. Anything you process 15 minutes or longer will sterilize as it processes. Never have to sterilize your jars when using pressure canner. I use stevia for sweetener because I have prediabetes. I halve or quarter them depending on the size. I don't heat my jars other than I rinse them with hot water from the tap. I add the stevia and hot water from the tap and I don't get the canner water too hot or it will break the jars. To remove bubbles I twist the jar back and forth very fast. I have canned a lot of peaches and haven't made anyone sick from taking the short cuts. I am a very impatient cook so I look for ways to cut corners without hurting anyone. Just thought I would share this for those who are like me. I should start my own blog and call it "The Lazy Cook".

PS I never cut corners by cutting time. If anything I sometimes add a few minutes. Your peaches turned out beautiful.

Where is the link for the water bath canning pot and and accessories? I have been watching different ways of water bathing and see that you have to boil for the elevation you're at is this true? Thanks great information

I remember my mom canning fruit that had to have a tsp lemon juice put to each jar of peaches etc, my mom would give me the lemon or vit c alternative and tell me I needed to put it on top of each quart of fruit to keep the color of the fruit in the jars and root cellared for the winter for a family of ten. I was a girl of 8 from my memories of wiping clean the cucs and peeling and putting garlic, cucs and dill and pack the jars for my mom. 50 gallons of dill pickles a winter for this family and for the Christmas concerts and community hall food needs at card parties etc... I cannot remember not helping my mother do the tiny bits I could do to help her. I learned to can this way by doing all the extra bits because when she canned there would be 20 to 40 quarts of fruit or pickles and jams. I still can our food for our families at 70. But we always used the lemon for the color retention even in her jams. Why did you not? or just a choice. or maybe the honey which helps the color retention in my dehydrated apples and food in my deydrator?

I add a little orange juice or lemon to the syrup. They actually taste peachier and the citric keeps them from turning brown.

I was disappointed you didn't use just plain water with a bit of vitamin c to keep the peaches from oxidizing and use the whole pits in the jars to keep that fresh peach flavor . Works with nectarines or any pitted fruit whether you can or freeze them. Learned that technique from a very old lady years ago.
