I noticed the eggs on the counter. Since you don’t refrigerate them how long are they good for? Good video by the way. I really learned something.

We always keep our eggs on the counter unless we wash them or hard boil them. We can keep them on the counter for 4 weeks or more. Doesnt look like it but we have a system. Eggs in top basket are “new”, eggs in bottom basket are used first. Then we just rotate baskets. Hope that helps explain things.

Excellent question! Many homesteading sites will tell you 30 or 40 mins at 10 lbs. I wanted to be on the safe-r side and verified 40 mins through the National Center For Home Food Preservation website here: nchfp.uga.edu/how/can_04/peas_green_shelled.html
