Ball/Kerr/Bernardin lids per the manufacturer - DON"T BOIL THEM.. If you do, it thins out the sealant and can cause bad seals. Just wash off before using. The compound was changed over 40 years ago and many recipes never changed their canning instructions.

I see this all the time with older people, but you dont need to sterilize the jars before cooking them.Just clean them good. Cooking the jars at 10 pounds for 100 minutes will kill everything. But caning fruit is different.

For all those just-now watching - the new Ball lids have a different sealing compound. They no longer recommend boiling them before using. If you do, you risk the jars not sealing.

There is no need to sterilize jars before processing in the canner. The canning process creates higher temps than the hot water bath. 212°F vs 250°F.

It's not a bad idea but not in the jar (that's another kind of canned fish). You can spray 1-2 spoons of vinegar on the salted and peppered fish and leave it to rest for half an hour before pouring the liquid off. It makes fish meat give away its flavours stronger. The same is true if you can it under oil (using basically the same procedure).

@@StayGold711 I came to watch about canning fish but I didn't see the rack on the bottom either. Yes, they come with a rack but it wasn't visible at all. Questioning that doesn't make 88msbugsy the canning police. She offered the suggestion that a towel can be placed on the bottom of the canner since it is not wise to place the jars directly on the bottom with no protective separation. Jars can shatter from the direct heat.

According to the University of Alaska Extension Department quart sized jars of fish should be processed for 2 hours and 40 minutes using the correct weight gauge for your altitude. Skin-on fish can be placed in jars either skin or flesh side showing. Skin side facing outward can be a little harder to remove from the jar just because it can have a tendency to stick a bit.

Its best to pressure cook meats. Boiling water only reaches a certain degree, while pressure cooking reaches higher degrees and kills Bacteria and prevents Botulism if sealed right.

Oh No. After watching this video again I notice several things. #1, get yourself a proper jar lifting tool. Using those tongs is only asking for a dropped and broken jar. #2, the really big one, When you lid your canner, you have to wait until it's venting a steady stream of steam, THEN wait for 10 minutes before putting your regulator/weight on the vent pipe. I wait until the lock pops up before I start my 10 minute timer. then after the 10 minutes, I put the regulator/weight on the vent pipe.

No it wont.. your an idiot. It's pressure cooked and sealed in the jars. This is done by proper guidelines. You need a special canner called a pressure CANNER THAT USES HIGH PRESSURE AND HEAT TO COOK AND KILL MICROORGANISMS AND SEALS THE JAR BY SUCTIONING THE AIR OUT. And pressure can process for specific guidelines time. The only thing that will rot is your brain if you don't get an education. It's called PRESSURE CANNING FISH FOR LONG TERM STORAGE...
