Please note that soaked beans should be used in this recipe according to tested methods. Always do your research before canning any product. You always can at your own risk.
Recipe: This recipe yielded 11-1/2 pints for me
2 15 oz cans tomato sauce
6 c water
1/2 c brown sugar
2 T honey
2 t yellow mustard
1-1/2 t Liquid Smoke
2 t salt
2 lbs dried Navy beans, not soaked
1 onions, chopped
1 package of salt pork
Mix ingredients for the sauce. Let the mixture get hot and simmer for five minutes. Place 1/2 c dried beans, up to one tablespoon of chopped onions, and one small (about one inch) chunk of salt pork in each jar. Add one cup of the heated sauce to each jar. Use hot water to fill each jar to one inch headspace. Remove air pockets from the jars. Add more water if needed. Wipe jar rims, and place a lid and ring on each jar. Process jars at 10 lbs pressure for a weighted canner or 11lbs pressure for a guaged canner. 75 minutes for pints, 90 minutes for quarts. Be sure to adjust pressure according to your altitude.

Fatback is not tough. I think yours is like salted cod, which is like cardboard. They cure it and dry it with salt. I would have rinsed and boiled the fat back to soften it and purge out some of the salt. Then after it boiled a bit, rinse it and put that in the jar. Oh and I've seen people use Star Anise and cloves and all spice in their beans. Just a suggestion. Also quite a few people like to use tomato paste in their beans, I think to thicken the sauce and give it a bit more flavor. Thanks for posting this video. Your kids look young and innocent - gave me a flash back in time, just a few decades !! Sigh.

Not to be overly picky. I have used plenty of items unwashed straight out of the box, but it is always suggested to wash items first, due to oils and dust from the factory that might be on them.

Question for you. Why do you only use 1 cup of the sauce and then fill to head space with water. Noted this on a number of different peoples videos. Am about to can pork n beans today and am unsure if there is a reason for it vs just putting in the sauce to the head space. Great video!

For me, it's purely preference. It waters the sauce down so that it isn't so strong and overpowering. That was a great question! I hope you enjoy your beans!

Could you mix your varieties of beans in each jar? My husband likes different beans in his pork and beans. ie. Lima, great northern etc... 😊

@@nanetteyauger5163 , absolutely! I do a 15 bean soup sometimes. The limas may get super mushy with canning, but all other beans are canned the same! Have fun mixing them all up! 🥰💜

If you run hot water over that tablespoon that honey will come out much faster.

Do you put in the same amount of beans if they are presoaked?

If they are presoaked, more beans can be added to the jar. I think I know the proper amount, but I would rather look in my book to make sure I am correct. I will look that up for you tomorrow.

@@mymodernhomestead I went ahead and tried it with a cup of presoaked beans and it seemed like a good amount. I think they got too soft tho. I will try using them dry next time. Thank you for the recipe and for replying to my question!

@@linkay6 ah! You beat me to it! I have JUST finished up recording for today to stop and look at it. Did you hot pack or raw pack? If you hot pack, fill the jars 3/4 full with hot beans, add a 3/4 inch piece of meat, add sauce/water to one inch headspace, remove air bubbles, and process for 65 minutes. I'm sorry your beans turned out soft. We eat our beans soft, so I might notice them being soft as much as some others would. It's always disappointing when we spend a lot of time and effort on things for them not to turn out the way we are hoping. ❤

For many, many years, I did not. I was never taught to. I never had any problems with it. It wasn't until this last year that I learned some people actually wash lids before using them. I don't have bugs or mice in my home, but I give the lids a quick wash now.
