PK: Yesterday I caught a 13+ fellow (Maybe a world record for an 80 year old fisher) at Francis Beach, Half Moon Bay on a Carolina Rigged with camo sand worms. It's guts were loaded with sand crab parts. After the catch, I searched for your pan fried cooking recipe and this nights perch, some shrimp, + lots of fried rice and loads of green onions on to our plate.

I use coarse kosher salt and a wad of paper towel to clean the cavity out. Works really well and brines it a little bit.

I found using an oyster knife to scale surfperch is the cleanest and easiest way. The scales just peel off and no mess from flying scales

I need to pull the worms before i cook those babies. I usually filet them out and inspect the filets before cooking...it can be pretty trippy when you pull a 2.5 inch worm out.....LOL

Nice work, PK! How do you keep your hands warm enough in those temperatures? Are those just polar fleece gloves? Having cooked saltwater fish for years and years I know that parasites will die when the internal temperature reaches between 140°F and 145°F for a duration of at least 15 seconds. The other way to kill them it to deep freeze for a week but I don't think many of us have sub zero freezers? I've been thinking about other fish I can catch for crab bait in my crab snares until the shad make their run in the spring. I wonder if our harbor seals will mess with something as small as a crab snare?

How can I calculate a good day to go out for surf perch? I was out at the gear heart beach yesterday. I had to drive for 2 hours and swells were so large I could not catch anything. It was a bust for my fist time for perch. Please help me out, I want to take my kids with me fishing.

Look for how big the swells are. Then look to see how close they are together. 10 seconds is not too bad but 5 sucks!

PK, Thank you kindly for the afford getting that video out so quickly.I appreciate it. I went out to the gear heart the day after the storm and let me tell you as my first experience, I was in a chest deep water before I know it, I thought it was going to suck me right in. I said to myself, perch is not worth dying for. I have been just dying to go out fishing and learning the details before taking my two sons(11 and 9 years old) out for fishing. I am going to try it again and again until I perfect it. PK, thank you and happy new year to you and yours.

Why I don't enjoy eating them. I have had the best results( still not great) by brining them overnight, then a true deep fry.
