Lightning trout have become a "thing" up here in Idaho. DFG raises them in their hatcheries and releases them in popular fishing spots. I've caught them with the usual lures for stocker rainbows.

Well I have not eaten one, but the meat looks great and I'm confident it will taste good....They come from the same place as standard rainbows. Our Lassen hatchery fish are top notch so......

Hear in the East, we called them golden trout or palominos. They’re basically just a color strain of rainbows. 5:15
