You only need to remove the main bracket if your changing the rotor or turning the rotor..removing the caliper itself is recommended if your not changing the rotor or turning it. As far as the brake fluid reservoir the capacity shouldn't overflow should go back to max level,you should never have to add fluid to it two reasons for the level to be low #1 worn pads , #2 A leak and if you got a leak you got a problem.....

If you have the equipment to resurface the rotors then yes. These ones were not warped or grooved and It typically is better to just replace when necessary. With drum brakes in the rear you will typically go through 3 sets in the front to one rear set.

Bleeding brakes is only if you are making changes to the brake lines (or similar circumstances) and need to remove air bubbles/pockets.

Good point, yes, another video from 1-A Auto says to open the bleeder valve on the brakes and let the air bubbles come out until there are none.

We need to clean with brake cleaner but you don't show how to do that, despite the fact that it looks like you have already done this. I recommend watching another video where they do this complete process.
