Soul Food Hog Maws & Chitterlings Recipe: Boil Hog Maws in a pot of water for 25-30 mins Once they cool off, remove fat as shown in video, and slice into small thin pieces. Pull slimy clear fat from chitterlings, starting from the tip of the chitterlings. Afterwards, cut the chitterlings into small pieces (don't leave them big and long). Chop up 1/2 green pepper, 1/2 red pepper, 1/2 white onion, 2 stalks of celery into small pieces Place Hog Maws and Chitterlings into a big pot Add chopped vegetables and 2-3 tsps of minced garlic. Add 1/4 to 1/2 cup of apple cider vinegar and a small amount of black pepper Fill pot with water 2 inches from the top Cover with a top leaving a small crack on the side Cook on high heat for 4 hours Once Hog Maws & Chitterlings are tender add a small amount of Crushed red peppers, Hot sauce and salt to taste

looks good but one thing to remember when cooking them is to reduce some of the fat by draining some of that fat juice off that collects at the top or you'll have a bowl full of grease.

I love Chitlins after I cook them the next day I batter them and fry them, I made a batter with flour eggs vinegar and milk I also season the batter with a little season salt dip the Chitlins in the batter and fry in hot oil like chicken. It is so good

I followed the first steps which was to clean the chitterlings with apple cider and bakng soda amd to pick them..... But i seasoned them with some Slap ya mama black pepper butter lemon pepper and since it was already moist and with water i just put it on the stove top on medium with the chopped peppers and my house smells soooo GOOOOOOD lol yummy 😋

For those of you that think this is slave food, If the slaves didn't have this food to eat, they would have starved. They made do with what they had to eat and did a great job in doing so.

@@kialane8261 I made them!! They were soo tender. I used my small slow cooker but boiled them first. Make sure you season them after they boil down a little bit to avoid them getting tough. I only made half a bag and it still took around 5 hours but they came out sooo good. I also didn't use vinegar because my momma doesn't either. Good luck baby! No , tripe is made from the intestines of a cow. While chitterlings are the intestines of a pig, and hog maws are the pigs stomach. They are both similar in taste and texture, but chitterlings, in my opinion, have more flavor. Chitterlings are the most common to use in menudo. Some home cooks do use beef tripe in their menudo, but typically, chitterlings are used in it. Also , if you like menudo, you will probably enjoy chitterlings and hog maws . They are very pricey now, unfortunately, but I love chitterlings and hog maws, it's my comfort food. Typically I only make them for holidays or special occasions. If cooked correctly, the flavor is reminiscent of bacon and pork chops , at least that's how they taste using my recipe ❤ I also add some liquid smoke to mine while cooking 😋

Your recipe looks good and I'm pretty sure they are delicious as well. I like Chitterlings but not with all the liquid. After my dad cleans them, my mom cooks the chitlins in water with onions, celery, vinegar. Afterwards, she takes the chitlins out of the liquid and chops them up. She will put them in a cast iron skillet with fresh onions and seasonings and sautee' them. That's the ONLY way I will eat them and they are delicious.

Damn this looks amazing. I have been craving chitlins for the last 2 weeks. I've only cooked them myself one time last Christmas, but they were amazing. My mother used to cooked them for Thanksgiving or Christmas every year. It's only May 6th, but I'm sitting her thinking I'm gonna cook me some chitlins either this Sunday for my 42th birthday or next week since I'll be on vacation. Actually I'm craving an entire holiday meal, and I think I'm going to treat myself to chitlins, with either turkey and gravy, cornish hens, lamb chops, or rack of lamb, mixed greens with either ham hocks or ham, and potato salad. my husband made that curry chicken recipe 4 nights ago and IT WAS THE BOMB.COM!!!! I had no idea my hubby watched this channel until I tasted the dish and heard phillyboyjay's voice. i said, "is that phillyboyJay?" the hubby said, "YEP!" we love it

👑🏅🥇🥈🥉🏆🎖to you and all those dedicated to cooking chitlin s because they are a delicacy and truly a labor of love. I tried and I couldn't get past the smell during the cleaning phase and retreated. I watched my mom make hog head cheese with a hogs head. We loved eating pigs feet, hog head cheese and soused, chitlin ect. Grew up on those things.

I really enjoyed the recipe I'm a new subscriber now after watching this one video. You have the most detailed information on how to properly clean and cook these items very impressive. And as a good old southern boy from South Alabama I love me some hog maws and chitlins.

Don't find people making the maws too much anymore. This just reminds me of back in the day when if on a holiday you didn't have some chitlins you ain't had no real country down home meal. Thanks for showing this and I hope more people will try this dish and see for themselves how great some chitlins taste.

Thank you! I've long been a fan of hog mass, but never had the chitterlins, that I recall. I was wondering about using your method, but in a crock pot. You know, low n slow, say over several hours. Oh, and have you used those "Hot Mama" pickle n a bags in your cuisine? The juice is stellar, and you just slice the pickle up for soups and stews. Mmm!!!

id pass on the peppers and add potatoes. onion, garlic and plenty of lousiana hot sauce and butter for taste- also i clean three times in vinegar until sqeaky clean! (Bama style)

We do it differently in southern Louisiana, that looked more like Northern Louisiana style. Down here we don't fool with Hog Maws, they tough and can slow down the cooking process. We just cook chitterlings. Also, we start with a light roux, darker than a buerre blanc but lighter than an etouffee roux. So a light tan. So I would have taken that butter you used and mixed it with flour and stirred constantly until I had my light colored roux then I put those chopped veggies so they can sweat a little and also stop the roux from browning, still stirring the whole time... you never stop stirring, that is why we all have stools by our stoves so we can sit there and stir roux because if you burn it or overcook it you have to throw it away and start over, there is no saving a scorched roux. Once the veggies have sweat we add the chitterlings, vinegar, seasonings, (including Kitchen Bouquet) etc. and water last. Once it all comes to a boil we stir real good but the heat to medium-high and cook for about 5 - 6 hours, not 3 and 1/2. Then it has that buttery tasting gravy you were referring too, that comes from the roux you make first, and also its thick enough to put over rice. We don't really put hot sauce in it, we serve it with hot sauce so people can make it to their taste on the spice. If we put anything in it will be on or two shakes of Tabasco but not much. Try it this way next time and see if you like it. Then you can have two styles your way and the Creole way. :) Enjoyed watching!

Yes, I boil them three times pour that water off then four boil I add ingredients to get the grease/ fat off!
