queenie_the_virgo Basically, but my mom & grandma used to put in Adobo seasoning, fresh garlic, diced onions, poblano peppers, pork stock (or chix). Then they would simmer the ears for about 3hrs (not sure what kind of thickener they used)! Over a plate of yellow rice, this dish would feel good in your belly lol

My family would cook these with a pork hock, and skip the hot sauce and corn starch. Lots of onion, garlic, leave veggies in large chunks. Cook all day then strain and cool. Skim the fat off the solidified broth, pick the meat off the bones. Reheat the broth to liquify and pour over the meat in a loaf pan (can save some carrots and celery for colour if you like) and let it cool again. In Poland ( and elsewhere) it's headcheese. Delicious. Wonderful. Superb. And the best treatment you could imagine for arthritis. I made some last weekend and I have had a wonderful week without pain. Extra broth? Dice it cold and eat it, or reheat and drink.

you're bad. It is 7:45 AM and if I had those beautiful pigs feet here now, I would have them for breakfast. There was a time that I didn't eat swine. But, back in 1973 I took a 3 weeks vacation to Puerto Rico were I was introduced to what I call today, my favorite source of protein.
