a quick question, when cutting the cake, will it not be too crunchy with the compound chocolate masking? could you do a thicker ganache instead of the compound chocolate?

Thanks alot yennersway. What if I want to work on Tiered cake, would it be safe to stack with little or no Dowell. My thought is in how to make the Dowell Pentwater the chocolate without causing breakage?
