This recipe is superb. My stepfather and I are Texas barbeque people and we frequently "compete" with each other on weekends. Never could beat him at chili, though...the brisket idea may put me ahead, ha. Love your stuff!

I just made this at the pit today.Man,one of the best meals i've ever had!!I did add some beans and more cayenne(no,i didn't cook my Porsche,he's all fine in the garage:D) and got the perfect heat.It was perfect with some tortillas and some good ol' smoked ale.Thank you guys for this recipe and congratulations for this kick-ass channel!! for the most part you are right..! but not all ketchup is the same, my friend....! BTW Most winning BBQ teams use a well known brand of ketchup as the basis of their own sauces. They tweak it to make it their own special sauce. Thanks for your support. -BBQ Pit Boys

Got this (at least my own variation) going as I type this. Something I've taken to doing is making crude patties and charring the ground chuck over the open fire before scrambling it in the iron pan. Adds a GREAT smoky flavor to the finished dish. Getting just cold enough here in Alabama to rock some damn good chili...can't wait.

Looks guuud! I lived in Texas and we used what was local as far as smokin' woods. A blend of mesquite and oak chips with some Hatch chiles and good ol ShinerBock to boot! Keep the videos comin'!

I have made this several times, it's my favorite. I smoked the brisket as he did beforehand. I also did what he did on another video, cut the onion in rings and then pre-cooked them on the grill before chopping up and adding to the pot, I smoked with them hickory in my Weber Smokey Mountain Smoker. Same with the jalapino peppers, smoked them first. Man, the best of the best of chili. I make my own bbq sauce and can it, I need to get a camera and show how to do that.

Lol, I have made a lot of chili in my day, with beans, without, hotter than sin, mellow, with all sorts of wild game and beef but I have never put brown sugar and barbecue sauce in any of it thus far. Some habanero's would go good in there too.........Going to have to give this a try. I had chili last night with hamburger and leftover brisket..............very good. Thanks men.

hey bladespawn420, it's an old carbon steel knife, about the only type of blade we use. Keeps a good edge, and is well balanced. The black iron and graniteware pans are a must if you get serious about cookin' on the fire.

A old friend of mine used ketchup for a base of his hot spicy salsa mix he made to add to chilli or what ever you wanted to add some spice too. Never could tell it was there until I seen him make it.

If you enjoyed this video you would probably like reading a cookbook published in 1974 entitled "Forty Years Behind The Lid" by Richard Bolt. Richard Bolt was a real chuck wagon cook. Mr. Bolt cooked meals for the cowboys on various large ranches in West Texas during his lifetime. His cookbook has the directions for real chuck wagon chow in "family size" portions with interesting anecdotes about his life "on the range. This book may be out of print, so if you find a copy, you better buy it!

I think it's a shame that people who care about a good chili, talk so much about there shouldn't be beans in it. Yet, they don't put a single chili in it. Only powder.. :| Glad to see they atleast used a little jalepenos. Personally when I make it, I make it with 3 different kinds of real chilis. No powder-heat, only REAL heat!

skvakagud My current recipe uses: Soaked ancho (5), Arbol (3), cascabel (3) & guajillo (5) Tin of chipotle in adobo Few Pickled jalapeños Big Pinch Cayenne & smoked paprika Cumin, lots of garlic. Molasses sugar. Low & slow with ground, chuck & brisket. Blitzed tomatillo, piccolo, bell peppers, onions. I add a fresh dollop of paste towards end to give layered flavour. I like to add a big handful of roasted Maize.

Chili powder is ground chili peppers, which is what a jalapeño is but it doesn't have the flavor or heat that many of the chili peppers found in a good chili powder have. There's a whole other world of flavor out there when you start grinding your own powder with different chilis besides the jalapeño. There's more heat and flavor in a dried pepper because the water has been removed in the drying process so you're left with a concentration of both. I use a combination of chili de arbol (heat), chili ancho (fruity) and chili guajillo (smoky) chilis with toasted cumin and mexican oregano in my powder. If I don't have powder made, I can just add the reconstituted chilis to a blender and blend them into a slurry that can be added in place of powder. Both get the same results.

Chili peppers aren't readily available to everyone but onions and garlic are so a lot of people have to buy dried chili peppers. It doesn't take anything away from a good pot of chili. In fact, most contestants in chili cookoffs use both powdered onion and garlic and they win with it. I'm fortunte to live in south Texas about an hour west of San Antonio where it all began because I have access to lots of different varieties of fresh chilis when they're available, but they get dried and stored in my freezer when they're not. Chili powder made from scratch will blow away anything else that's on the market. As far as jalapeños for chili seasoning? Maybe if you can find red ones that are ripe but there are literally hundreds of different kinds of chili peppers out there so why not explore the world of dry chilis rather than having to use what's available fresh? Why not give it a shot and make some chili powder (or paste) and see if you don't agree. Here's a simple recipe to begin with and can be tweaked. If you want a little more heat, add more chili de arbol or pasillas. Both are hotter and more flavorful than a jalapeño. 10-12 LARGE DRIED CHILI ANCHO - (Rich and fruity)6 DRIED CHILI GUAJILLO - (Smokey flavor) 6 DRIED CHILI DE ARBOL - (Provides heat) 1 TEASPOON CUMIN SEEDS - (I like to use whole cumin seeds that I toast in a hot cast iron skillet and grind) 1 TEASPOON MEXICAN OREGANO FLAKES Remove stems and the seeds and then re-hydrate the chilis in hot water for about 15 minutes. Put them in a blender and make a puree out of it to add in place of chili powder. Toast the cumin seeds in a dry cast iron skillet until you being to smell and they are slightly darker. You can throw them in the grinder along with the peppers and the Mexican oregano. As an option, you can remove stems and seeds and grind everything together to make your own chili powder. It will keep for a long time in a jar or freezer bag in the freezer. Dried peppers can also be stored in freezer bags in the freezer. What you don't want are dried peppers that are completely dried out where they break in half when you try to bend them. A fresh dried pepper will be pliable and leathery.

@@rickdavis2235 This is excellent. Thanks. I didn't know you could freeze ground chili power, but that makes sense and it just made my life easier. And, yeah, absolutely right: homemade powder & paste blow away anything I've ever been able to find in a store. Another use: I can't get ranch beans where I live so I've messed around and a couple years later finally figured out a chili paste base that uses 6 anchos. Roast 'em in a cast iron skillet for about 2 minutes and then re-hydrate them to blend with the tomatoes, garlic, and spices etc. Simmer your beans for a couple hours in that mix and you're in heaven. Some folks would consider it sacrilege, but they can contribute to a mean chili that even my kids will eat. And for me that's the test - when a three-year-old asks for seconds on chili that would make a marble statue weep real tears.

He uses an Old Hickory 10' Butcher knife. He mentioned it in another posting and I went and ordered it on eBay, it was very inexpensive and its one of the last knives made in America! I bought a few of them. They are huge. I gave them as gifts to my family.

I love Texas chili, but I prefer the Cincinnati chili for its allspice and cinnamon flavor. When I make chili, I don't serve chips or cornbread. I line the bowl with a flour tortilla.

Dang, this guy has the coolest cowboy voice ever! He could read an assembly manual for an Ikea bookcase and make it sound wild west, masculine. - We're gonna put this here bookcase together the cowboy way! I remember going to a Potawotami pow wow. been making Texas Chilli for 50+ years. I use chuck, and my chili is cooked for about 8 hours. I see that the chili champs in Terlingua only use ground beef. (Must be yankees).. I've never used ground beef, but your reciepe is interesting, I'll have to try it.

For whatever reason when Wick Fowler started the big chili stampede out in Terlingua, they used ground chuck. Most chili contests if there are any chunks of meat in the chili, then they won't get many if any points. I've always used venison hamburger and sirloin or brisket cut up in my chili and I like it that way.

Original chili known as Texas chili was cooked by the "chili queens" in San Antonio, today it is found in Mexican restaurants as Chili Colorado, just a spicy chili sauce and meat. The modern chili we know today with the beans was derived during the early trail drives and ranch cooking where cookie would cook it all in one pot beans included. Either way you like it, it is all good....

That chili looks really good -- very interesting about how Mexicans used to make it and it was called "peasant stew". It's scraps. It's exactly what you get at Wendy's -- they used yesterdays unsold hamburger meat -- so, next time you're at teh Wendy's drive thru tell them you want the "peasant stew". I think the takeaway here is it used to be peasant food, probably no right or wrong way to make it. It's chili -- it's low end food, make it how you want it, and don't let anyone argue with the use or absence of any ingredient
