As a steak enthusiast I'd recommend 1) Throwing that pan in the trash, whatever coating it had isn't effective anymore and is probably worse for you than signing into Google. 2) If your not grilling try a cast iron pan they're perfect for steak because they retain heat, once seasoned relatively non stick, and can go in the oven. 3) Don't use oil, chicken and fish are for frying not steak.

4) After getting your hands in a cast iron pan, fry your steak as normal and after that throw some red wine and scrape the fond on the botton. Mix that with some butter and thyme/sage and you have a delicious pan sauce for the steak.

You might want to get that copper pan re-tinned/lined again (sorry dont know the term in english) copper cookware is usually lined with tin or steel because copper is toxic and can contaminate food and the lining wears down over time.

Years ago I thought that making a good steak was some arcane black magic and the only way to get a good one was to go to a steak house. The method I use today is very similar to the one that you presented here. I appreciate that you didn't skip over the footage of the steak cooking. It's so important to have good instincts about how long to cook each side. The key principles (many the same as yours) that I've used to make a good steak are: Select a good cut, let it sit outside of the fridge to warm up, apply a seasoning (salt and pepper are an excellent choice), rub the seasoning in, let it sit with the seasoning for about 30 minutes. Place on skillet with high heat, watch for "juicing" on the other side of the steak for cues on when to turn it. Finally, let it rest for a moment before eating. I'd love to try the truffle salt that you suggested. Wish that I had seen a video like this all those years ago when I had no clue. I would bet you find those steaks you make at home superior to a steakhouse offering.

Wholesome content, so approved. I highly recommend dry brining overnight by the way. Will make tough meats tender. You can also use meat tenderizer; another way to deal with tough meats is to cut in thin slices across the grain.

I did this same thing about a week ago, but a little different. Unseasoned Ribeye in cast iron skillet with butter instead of oil. Sear for 1 minute per side and long edges, then finish in the oven at 400 F for 5-8 minutes. Nice Medium Rare with only the pure beef taste. I have never been a fan of seasoning a steak or salting. I have tried previously putting the garlic with the butter in the skillet to transfer the flavor, but was not for me. Boudin goes well with this preparation.

I can see other people saying basically the same thing, but you really should get a cast iron skillet, the first one I got was a 12 inch Victoria on amazon on sale for like $14, I prefer my lodge though because it retains heat a bit better and was still only $19. Your pan is clearly warped and the coating is coming off which if ingested could 'potentially' be dangerous (but probably not that bad). One more tip that I don't think I've seen other people mention yet, is it can be a good idea to pat both sides of the steak with a paper towel to dry off the surface which makes it easier to develop a nice crust

A Victorinox knife just like that one almost removed one of my pinky fingers. They are good knives. Also, don't do food prep drunk. On pepper, also try long pepper or grains of paradise. On oil, also try ghee/clarified butter. That black truffle salt is a wonderful idea!

Tough cuts of meat can in fact be made tender you don't need to have a $27 steak. One method is the bromelain enzyme marinade method, from pineapple, the other is sous vid slow cooking method. You should look into it, there are plenty of videos on KZbin.

You should try steak au poivre, my go-to steak recipe. You cook as you did but after you put in a low sodium bullion cube or beef broth and cream and then reduce that a little bit then pour it on your steak that was sitting in tin foil.

It's garlic, onion, season all, and beef steak seasoning for me done over a nice propane grill. I get great thicc cut porterhouses and New York strips from the local butcher. I always cook mine medium rare, sometimes rare. Serve with a glass of the finest locally made cabernet sauvignon red wine.

Garlic Salt Lemon pepper Salt Pepper Oil of your choosing Worcestershire sauce Dip in oil Worcestershire sauce mix then into seasoning mix. Grill at 500° a minute and a half on each side for a thin steak up to 2 and a half minutes for thicker cuts. Top with butter for a delicious steak
