If you want it to be pull apart tender, finish it off on high heat (300F) for an hour or two while covered in a layer of pink butcher paper and foil on the outside. You could also build on to that brisket bark by using a thin layer of mustard. Great price for such good eatin'. Enjoy!

70 cooking realistically. didn't wear gloves when handlng raw meat. hand oils and cross contamination prevented this dish from being level 90. dude touches raw meat pathogens every time he reaches for the spice rack, unless he sanitizes all his spice bottles

Edit: I'm a butcher btw, and our meat production is hand wrapped. meat quality here is a limit, too. i've seen better chuck roast cuts, their cutter is not even rocking the knife, leading to some uneven cuts.

There's also the strict health and hygiene standards and the FDA that ensures you won't shit your pancreas out. Unlike places like China where they use legitimately toxic additives on stuff like baby formula.

You should also spray the vinegar on the underside of the meat. Vinegar can reduce the production of polycyclic aromatic hydrocarbons in grilled (and I'd assume smoked) meats by a good amount. These compounds have been shown to increase the risk of cancer in small quantities. Vinegar is also a great washing step (15 minutes ish) when making baked potatoes and baked fries, with them it's the production of acrylamide (a chemical that is potentially carcinogenic) that is greatly inhibited. Although blanching the potatoes in 70°C water for 10+ minutes before baking also does the trick.

I have switched to chuck roast from brisket and it does end up similar but not exactly the same. Still worth doing as brisket is expensive. Good luck on getting 99 cooking 200 million experience.

@@LuisC7 according to what I could find these are some names for chuck roast. Chuck Arm Roast Chuck Shoulder Pot Roast Chuck 7-Bone Pot Roast Cross Rib Roast English Roast Chuck-Eye Roast The smoker I use is a pellet smoker from RecTec it's their bullseye model. It's about the same size as a Webber grill. Works great and is way easier than a char coal smoker. Now do you get the same smoke control no but you also can't mess up. If I were to get a traditional smoker I would get the franklin's model only because I am a fan boy.

I always thought of it as a cheaper substitute to ribeye. There's also a meat cut called flat iron which is similar. So how much do you think I'd spend to buy a full smoker setup? A good quality smoker. Not high end, not low end. Just the best value smoker. And also cost of running it for 7h

Hmm, are you comparing to whole vacumn sealed packed brisket? I know I'm in Texas, so the price structure might be a bit different, but when the sales drop here on briskets, you can get as low as $2.20/lb in the last few years. I just pick a 12+lb one up when that happens and freeze it for when I want to do a smoke. Chuck roast is tricky for me to get much lower than $3.50/lb, and that's on a good sale (still a great cut of meat though)

@@popemon7608 yeah it definitely depends on the region your in and the time of year if chuck roast is cheaper and easier to get than brisket. Indiana it depends on where you to buy. Costco has good deals and then if you have a good local butcher you can get a good price on both. The region I am in has a bunch of cattle farms who butcher and sell local so that helps prices across the board.

Nice cooking video mr outlaw, you did a solid compiling job. I can confirm that the other comment about the incoming increase in beef prices is looking to be quite correct, unfortunately. I've gotten into smoking lately too, though I've been cheating with a pellet smoker. They actually used to make oklahoma Joe's smokers here back before the brand was bought by char broil. If you need a use for leftover brisket/bbq or it's not quite as tender as you'd like, it makes a really good addition to a pot of chili.

short answer is no the small size of the chuck just dose not have the fat for a longer slow cook. also higher price per pound. best bet is just to buying a brisket for a cheaper price per pound any ways. as of 2022 its at 3$ a pound for a whole packer briskets.

Looks yummy! The grain on a chuck roast goes different directions throughout. You might carefully cut against the grain. That’s probably why it doesn’t pull apart easily. You also might pick one with more fat throughout. That first one was really lean. I make a lot of pot roasts lol.

The runescape music tho ❤ I can make fire spaghetti aglio olio e peppercino and it took me awhile to get the timing, and pasta water reducing, and finishing cooking the below al dente pasta in the pan, and whipping it into a sauce, awhile to get it just right but it's great. My roommate does all the smoking

In the UK we use a mix of cm mm inch yard mile pint and so on. For example you buy petrol in litres but measure fuel consumption in miles per gallon. You measure short distances in cm and m , but measure long distances in miles but you measure people in feet and inches . You buy soft drinks (like cola) in litres but beer and milk in pints. You weigh most thinks in grams for cooking , but measure people in stone. Some call it crazy , i call it weeding out the normies who where not born here.
