Look at that cheese pull!! This looks and sounds amazing. Like an elevated, outdoorsy, cheffed-up shrimp and grits. I think I prefer the scallop and cheesy polenta version. Great job! Plus the comfy car camping set up. Great stuff. Thanks for taking us along for the ride. Safe travels.

Shrimp & scallops are my favorite seafood. Being from the south, I was raised on grits. There was a pot on the stove all day! I have never had polenta. I do love cheese grits too. But my favorite is just butter, salt & pepper with a slice of block sharp cheddar on the side. I never know what you are going to cook on the road! I love it! HUGS~Donna

That looks really good. I will try it in a month or so when scallop season opens here. I like to buy scallops directly from the fisher when they come in for the day, which is an option here. The down side of that is that you generally have to buy at least five pounds so you are either eating a lot of scallops, or you have to freeze most of them. Plus five pounds of scallops is a bit pricey ($50-$75) and you have to have cash. I think I will buy some romano and parmesan, and grate it myself for the polenta. Another cheese to consider would be Jarlsberg. I like mild cheeses with delicately flavored seafood like scallops and lobster. Jarlsberg is my go to cheese for making lobster omelets or scrambled eggs. I have a suggestion for the wine with seafood like scallops and white fish. Try some New Zealand Marlborough Sauvignon Blanc. A good, reasonably priced , option is the 90+ brand. It is currently very good for the price ($10 range). One other thing I like to do with scallops. When I cook them I add just a touch (a teaspoon or so for 10 scallops) of Pernod (alternatives would be anisette, ouzo or absinthe). That gives the scallops a delicate anise flavor.
