The Eat More Plants Official Vegan Pho🍃
1 large Onion, halved, charred
4.5 in piece of Ginger, sliced, charred
Toasted Spices
1 tbsp Coriander Seeds
7 Star Anise
1 Black Cardamon
1 Cinnamon Stick
1 Daikon
2 Leeks
2 Carrots
2 Kohlrabi
1 Apple or Asian Pear
1 1/2 Gallons Water
2 1/2 tbsp Salt
1/4 cup Rock Sugar
2 tbsp Mushroom Seasoning
1/2 tbsp All Vegetarian Inc. Chef's Delight Seasoning
Add proteins of choice to broth - fried tofu, oyster mushrooms, vegan "beef" ball.
Serve broth over vermicelli noodles, thinly sliced onions, scallions, and cilantro.
Serve with thai basil, bean sprouts, jalapeno, lime, and saté.
Saté Chay (Lemongrass Chili Oil) 🍃
1/2 cup Oil
1/2 tsp Annato Seeds, add to oil, then remove and add...
2 Shallots, finely chopped
1-2 tbsp Crushed Thai Chili (depending on spice preference)
3 tbsp Garlic, minced
1/3 cup Lemongrass, finely chopped
1 tsp Salt
1 tbsp Mushroom Seasoning
1/2 tbsp Sugar
Vegan "Fish" Sauce (Nước Mắm Chay)🍃
3-5 Thai Chilis, sliced
1 tbsp Garlic, minced
1 cup Lime Juice
1 cup Vegan Fish Sauce
1/2 cup Palm Sugar
2 tbsp Rice Vinegar
2 cups Water

3 cups Vegan Beef Slices, soaked, drained, patted dry in a paper towel (3 cups hydrated not dry)
3 tbsp Soy Sauce
2 tbsp Vegan Fish Sauce
1 tbsp Mushroom Oyster Sauce
3 tbsp Brown Sugar
3 tbsp Garlic, minced
1 cup Scallions, thinly sliced
1 tsp Black Pepper
1 tbsp Sesame Oil
1/4 cup Water
Pickled Red Onion Topping
1 Red Onion, sliced
1/2 cup Rice Vinegar or White Vinegar
1 1/2 tbsp Soy Sauce
3 tbsp Sugar
Serve the Shaken "Beef" on a bed of watercress and a side of lime, salt, and pepper dipping sauce. Garnish with fried shallots and scallions.
Vietnamese Fried Spring Rolls or Egg Rolls🍃
1 package of Spring Roll Wrappers
Filling:
2 cups Bean Thread Noodles
1 cup Cabbage
1 cup Taro
1 cup Carrot
1 cup Wood Ear Mushroom
2 tbsp Garlic, minced
1/2 cup Onion, minced
2 tbsp Sugar
1 1/2 tbsp Mushroom Oyster Sauce
1 1/2 tbsp Vegan Fish Sauce
1 tsp Black Pepper
1 tbsp Salt
Fry at 350-375 degrees until golden brown.
Lemongrass "Beef" and Tofu🍃
3 tbsp Saté or Lemongrass Chili Oil
1 Shallot. sliced
1 Thai Chili, sliced, seeds removed
1 tbsp Lemongrass, finely chopped
1/2 cup Vegan Beef Slices (1/2 cup hydrated not dry)
1 1/2 cups Fried Tofu
1 tbsp Vegan Fish Sauce
1 tbsp Mushroom Oyster Sauce
1 1/2 tbsp Sugar
1/4 tsp Black Pepper
Garnish with Scallions and Fried Shallots.
Mushroom Pâté (Pâté Chay)🍃
1/4 cup Water
2 cups King Mushrooms, thinly sliced
1 tbsp Oil
1 Shallot, chopped
1/2 cup Walnuts
1/2 tbsp Mushroom Seasoning
1 pinch of Chinese Five Spice
1/2 tsp Salt
1/4 tsp Black Pepper
add mixture to a blender, add additional 1/4 cup water, blend until smooth.
