Great info, I've been cooking since the late 80s and I learned something new! Ty I've also noticed having eggs at room temperature helps with not breaking the yolk.

Wow, you actually made the process easy--I made an egg this way today & it came out just right. Historically I've been queen of half-burnt/half-undercooked fried eggs with chewy edges and runny Egg Whites. Gross eggs are over for me-- thanks to you!

I learned how to flip an egg with no spatula with a slice of bread. Skillet out of cabinet, bread from bag. Practice that way. It's all in the wrist! She flipped that perfectly!

Perfect. Seems very few grill chefs know how to cook a medium over egg. My feeling is when there busy they just can’t be bothered and it’s always over easy.

This was actually cooked to long in my opinion, but I use a compatible spatula for my egg pan so that it doesn't scratch. That gives me ability to puncture the whites sooner so they can get done allowing me to flip them to cook on the other side. It gives you more of the runny yolk & fully cooked whites.

Mmm if a restaurants busy I wouldn't bother. Even if it is cooked perfectly it needs to get to your table in about a minute or it will carry over and loose the runniness.

I always have issues getting my egg perfectly medium bc I love the jammy yolks where it isn’t running right out but I always get it too runny or too hard. Even breakfast places have a hard time bc I tried ordering them medium at ihop and I just got a sunny side up egg with a pure liquid yolk

That is hard! Especially with frying an egg you have such a small window of time to before they go from jammy to hard. Even if it’s cooked perfectly at a restaurant the time it takes to get from the window to your table can over cook it from carryover heat. Honestly, for jammy eggs I would recommend poaching or soft boiling. You can control the factors there a lot easier and the yolk isn’t flat so there’s more of a window!

Honestly do not remember. Look for something heavy. Light-weight or branded/colored pans like Tasty are usually a pos.

The trick is 'Patience' when you cook an egg, I always do mine starting on a medium heat so that the white starts to show immediately, then turn that heat right down to 2 or 1, after around 10 minutes perfect egg 👍

I hate when I order overmedium eggs at a restraunt and the eggs are super running. When I complaint they always say that's the way overmedium eggs are cooked...then I end up just ordering scrambled eggs. Why is it so hard for cooks to get it right. This happens alot at baker's square.

Because, even as previous comments in this thread show, people have different ideas of what an over medium egg should be and to be honest, it is the hardest type of egg to cook on a busy line. Your window of error is about 10 seconds and you have to account for everything else going on that plate and the timing, along with all other plates going to that table, plus keeping track of the next three tickets you’re already working on. If you overcook it it is sure to be sent back so most cooks err on the side of undercooking rather than over. In short, ordering scrambled is a much safer bet if you want it right every time. Over medium is just a lot more chance for error.

Seems like your heat was still a little too high. You ended up with a combination hard/easy rather than a consistent medium. Really hard to get that perfect jammy consistency on a pan, but I keep trying. Thanks for the pointers!

Just add them to the same pan, rotate the pan so the heat alternates between eggs if one is cooking faster than the other

About 3 1/2 minutes if I recall correctly. On the line I cook them at medium-high heat and it goes a lot faster but its takes a lot of ruined eggs to get it down with higher heat.

I'd go with a poach or soft boil. Typically, frying has too direct of a heat source to provide even cooking throughout.

So my uncle has had brain cancer was an excelent cook still makes middle eastern food well but him and i have a freiendly argument on what an iver medium egg is he will make over easy for a runny yolk or cooked yolk for over medium and the excersize for his brain is the challenge so this was a good video of an explanation of what it is
