I make eggs every day. I make them Over-Medium on a glass top stove Warm up pan to half on the dial, with butter or marg. I use a pan with a heat indicator so when it's fully hot and the butter is bubbling, then I break two legs in and sprinkle a little pepper and add a little more butter on top, I don't salt yet because the eggs don't congeal as easily if the salt is breaking down the texture. Here's the key. I simply put 3 minutes on the timer and wait, but slide it around after a couple of minutes. When the timer dings, I flip it, salt and pepper that side and put 30 seconds on the timer and when it dings its done. It will continue to cook a little more if you put it on a hot plate, which mine is. Its a little more runny than the one in this video but the edges are never crispy like the one in this video. My eggs are perfect every day. Enjoy!

Thank you for those instructions! I'm going to attempt an over medium for dinner tonight. I can do any eggs, but never nailed medium due to the timing. Also, is there a reason you mentioned the material of your stove? Does that effect the cooking speed or do anything special compared to a traditional stove? Or are you just super proud of it? I'm just wondering lol but thanks again!

An even “easier” way is to break the egg or eggs into the pan, put in a tablespoon of water in with the eggs, put a lid on the pan, (glass works best,) and when the yolk is clouded over, the eggs are done. No flipping and risking breakage. Flipping was where I ALWAYS had trouble. Try it! You’ll like it! 😉

Instead of waiting for the white to cook, just break the white and let it spread around the pan, once cooked, then flip. You get an evenly fully cooked white and a nice runny yolk,

I hope that oil spray is virgin coconut oil (not) or extra virgin olive oil (doubt it) or you're asking for trouble down the road. The difficulty comes when: 1. a stainless steel pan is used and for 2. two or more that have to be done at the same time - four say, 2 each 3. a spatula has to be used to flip them. Can you do a video using those conditions?

Not necessarily as it comes from our Early Modern English “oft”, also found in Shakespeare. But you’re right about the “L” in the word “yoke”.
