I am not the best cook. However, I followed Deddy's recipe to the letter and this came out sooooo BOMB! The non pork eaters in my home were so jealous cause it looked and smelled soooo GOOD! Shoutout to Deddy for this amazing recipe.

I have prepared both the brown stew pork and the brown stew chicken, going by your directions. Both were DELICIOUS, and have prepared both several times. Thank you so much for introducing me to Jamaican cuisine. My sister, who has been to Jamaica, says it's better than she's had. I also have prepared Curried Chicken. Can't do the scotch bonnet pepper. The best we can do is jalapenos!

Thank you so much for sharing your recipe! I've never even heard of Browned Stew Pork but I bought some pork stew chunks on sale at the store yesterday and was looking for something to do with it. I came across your recipe and decided to marinate the pork last night in order to try the recipe today!! It's in the pot right now and almost done. Smells heavenly and the small tastes I had so far are delicious!! I'm saving this one to my recipe book because my local store usually has pork stew meat on sale!!

Deddy cooks with the right technique to retain flavor. Thats how I learned to do the stew Pork or chicken by using small amount of oil, braising, covering the pot and allowing the meat to stew in ints own juices, add small amounts of water, adding the seasoning and let it saute. I dont put too much water to submerge the meat to retain that flavor in the meat or else it seeps out into the gravy which will be delicious but the meat less flavorful. Cook to desired tenderness. At the end it makes its own gravy and no need for flour or cornstarch. Just raise the fire and let it rapid render down to a wonderful gravy and delicious meat.

I was doing that too, put in a freezer bag but I leave inside the fridge for at least 12hours to continue absorbing the seasoning, because I noticed that if you put right away in the freezer the meat won't absorb the seasoning once it frooze, when I cook the meat still taste fresh.

Looks for sure he is using a Jamaican Dutch pot. The pot and lid is usually made from cast iron, ceramic or aluminum.

You can also use a cast iron dutch oven pot available on Amazon, I suggest getting a pre season cast iron dutch oven pot. Also look up how to care for cast iron pots.
