Hey loves, how to cook Congolese cassava leaves update, full recipe instructions, very easy, quick and super yummy! Pondu is one of the most famous Congolese food and traditionally eaten a lot in many households around this time of the year as a celebration along side other dishes such as soso ya kotumba (oven baked chicken) & rice/kwanga or plantain 😍 this was a meal I had a lot during my childhood in Congo 🇨🇩❤
INGREDIENTS
500 grams of pondu (cassava leaves)
Palm Oil
Pichard
Onion
Leak
Green bell peppers
Courgette
Scotch bonnet (OPTIONAL)
All purpose seasoning
Nutmeg
Salt

Hi lady i'm a congolese lady...will like to add a small advice concerning when you should add the pilchard...it's better at the end when the pondu is completely cook in order to keep the flavour

Hiya, thank you for your comment and suggestion. I don't really like to taste the flavour of pichard so much in my pondu to be honest, that's why I cook like I do.

Compared to West African cassava leaves (Sierra Leone, Liberia, Guinea, CI, Bissau), Congolese/Central African cassava leaves are not thoroughly pounded... Check out the videos on West African cassava leaves to see the difference...

It’s hard to get unfrozen cassava leaves where I live as well as many European countries. They don’t last to long when they’re fresh that’s why companies pick, wash and pound them mostly back in Africa, pack and freeze them so we can also enjoy our home-food. The process in cooking fresh or frozen cassava leaves isn’t that different, you just need to pick it, wash thoroughly then pound. The rest of the process is really much the same. Hope this helps.

Nutmeg is NOT used in pondu yaya , you didn’t use aubergine which is a MUST in pondu and the pilchards is added towards the end as it’s already cooked.
