Unless your chops are breaded for pan frying all that oil/grease is unnecessary. You can either drizzle pan with canola oil or brush chops with oil (a sprinkle of salt & pepper) and pan sear on preheated (just above medium heat) pan till perfect sear color. (timing depends on thickness) Like steak let rest a few min covered or it will dry. Now all that flavor in pan can be used to toss sum FRESH green beans or asparagus while pork is resting. Glass of water due to salty meal and sum red wine to compliment your dish.

Old man cooking , no disrespect but I am a true southerner who has been frying pork chops since I was a little girl with my grandma. Rumor has it around these parts I can cook one of the best fried pork chops ever !!!! TRUE! but I have to call you out on this one... thinking you definitely added more grease to pan... the chops as you are frying them absorb the grease not produce more..... hmmm.... but on a lighter note I live the fact you aren't into the buttermilk and all the other garbage that makes a fried pork chop no longer southern.....😊

Dredging my chops in flour and then letting them sit for a few minutes before frying is how my Mama taught me to fry 'em. and sometimes, after frying them golden brown, I put them in a 350° oven with sliced onions and brown gravy for 45 minutes or until the onions are soft.
@OldManCookin10 жыл бұрын
That is a Great idea! Slice Onions and brown gravy.. Oh yea... ! Thanks for watching! :)

I just watched this and had always avoided buying pork chops cause they took too long to cook and since I didn't know I always end up burning them. Was never sure how it should look as I didn't want it uncooked so I would always make it brown nearly burned. But after watching this I know to fry it on each side for six mins. Thanks a lot for this video I learned a lot. The simpler the better for me when it comes to cooking
@OldManCookin9 жыл бұрын

Growing up in the Deep South, this is how I always had pork chops. It's versatile for non-southerners who choose to be rude to a better cook than rude ones. Thank you, OldManCooking for the memories. I'moved away from the Deep South 34 yrs ago & I could smell those yummy chops frying in your skillet. I still fry them as much as any other way & living in the NW Rockies, it's not common but have never heard a complaint. This is a tourist town of 9000 pop but up to a million visitors come through from a nearby #1 visited National Park. What most families asked for is, "Where can we get a good southern plate lunch? Always wanted to open a place to serve those. 😊

Different strokes for different folks. I like them crunchy as well, but sometimes you don't want to deal with the hassle of doing all that setting up mere hours before work, so just seasoning them works just as well.
