Here is the Recipe: Jump to the detailed recipe. (or, keep reading for the gist of it) - Dry Stuff 4 1/2 oz all-purpose flour (About a cup; sifted.) 4 1/2 oz whole white wheat flour (Again, about one sifted cup.) 2 tsp baking powder 1 tsps baking soda Wet Stuff 2 Tbsps butter Melted. 2 Tbsps honey 2 eggs Large. 1 tsp Kosher salt 8 fluid oz buttermilk (That's one cup.) 4 fluid oz milk (That's a half cup.) 2 fluid oz mo' milk (That's another quarter cup; use as necessary to thin it to a desired consistency.

I didn't like your method, I didn't agree with your method, I thought you had it all wrong. .... but then came the cooked pancakes and as an avid, learned pancake enthusiast, I was shocked. They are perfect. Smooth, shiny, good circle shapes and fluffy like you promised. I am impressed. ♡♡

Absolutely! If you don't wanna lose that buttermilk flavor, you can also substitute a 50/50 mix of plain yogurt and milk, or even sour up your milk with a couple teaspoons of lemon juice. If you go the lemon juce route, let the "lemon milk" sit out on the counter for about 20 mintes before using.

Made these and they were great! I used two cups of white whole wheat instead, and added a tsp of cinnamon; they were fluffy, tasty, and definitely a make-again! Thanks for sharing!

Good question! I heat my honey before serving by leaving the container in a hot (not boiling) water bath for about 10 minutes or so (glass is best; but plastic will work if the water's not super hot). You'll be surprised at how fast the honey pours with just a little gentle heat applied!

If you buy refrigerated eggs from the supermarket, you can set them on your counter and open the carton, leave them for a couple of hours until room temp and there is no condensation on the eggs. Then take some food grade mineral oil that you can purchase at a pharmacy or hardware store like Lowes, and rub a THIN coat of the oil on the eggs. You will be cable to store them on your kitchen counter for weeks with out going bad. I bought an actual egg collecting basket and lined it with a folded kitchen towel to hold my eggs on the kitchen counter. It looks nice.

In this case, you do. In recipes where baking powder and soda are required, it's usually about hitting the perfect balance of leavening and pH (acid vs. base) without leaving any funky tastes behind in the final product.

I make similar wholewheat fluffy pancakes ,even with oatmeal flour mixed with th wholewheat flour ,add different flavors like vanilla,cinnamon ,pumpkin spice ,coconut,but your vanilla bean suggestion is really good.Thank u.

Hmmm... Baking soda is pretty ubquitous, so thats a problem I've never had. It can also known as "bread soda, cooking soda, and bicarbonate of soda" and if you can't find it near the flour and sugar, I'd check the housekeeping aisle or the pharmacy. B.p. is basically b.s. packaged with a weak acid (cream of tartar), and the amount you'd have to add to compensate might add a metallic taste to your griddle cakes. I'd say your best bet is to ask a clerk at the store where they hid the stuff!

If you've only got a frying pan, you can still do up some hotcakes. Nonstick is best here- bring it up to around 190C (~375F) over medium heat. If you don't have a nonstick skillet, be sure to add a small pat of butter to the pan right before you add the batter. It won't quite be the same, but it'll totally be serviceable. Good luck with your hotcakes!

That was perfect recipe. Pancakes turned out so delicious and perfect. I added valina, cocoa pwd , dark and white chocolate chips. Substituted buttermilk with yogurt and melted butter with ghee. It was yummmmm.. Thankyou :)

Good question - It's your call. I use salted butter as I think the whole wheat needs the help, but if you're sensitive to salt, it's quite alright to use the stuff without.

Combining your wet and dry ingredients and allowing the batter to sit for about 10 minutes will allow the gluten to relax a bit, resulting in a better final product.

I was from the buy-the-mix kind of people as you called it. Now I belong to the make it from scratch :-) BTW I also tried it with yogurt and replaced the butter with light extra virgin olive oil, it still turned out fluffy, moist and soft! For people that don't use eggs you can use 1 banana in replace of two eggs or 1/2 cup applesauce or egg replacer powder and many other things

beeroosterm I don't know which vegetarian upset you, but they've done hell of a job. lol. My sister chose (randomly) one day that she wasn't going to eat meat anymore. That was when she was 13 and I was 11. She haven't ate it since, and she's now 21. It haven't bothered me at all though. More meat for the meat eaters. HOWEVER, she do still eat products that contain eggs and milk and all that other stuff. You're mad at vegans, not vegetarians.

yes on pancakes, cakes, anything you bake farm fresh eggs are the bomb for baking and I here duck eggs but I am not sure I will ever try it
