People often say that Igbo cooks are the second-best Nigerians in the kitchen (second to Calabar-Ibibio-Efik folk) but I just don’t see the kind of range Igbos have reflected in Cross River/Akwa Ibom. They might have some good vegetable soups and a refreshingly-meticulous general style but not the range, variety and vaguely well-known traditional customs that go hand-in-hand with how Igbos cook, not that they’re not still good. Ibibio-Efik people in the U.K. are also really, really good at cooking jollof rice, I’ll admit.
