Commenting here from Cape Town, South Africa - we used to eat ostrich quite often, definitely a strong gamey flavour which you get used to, the fillet should be cooked rare for best results IMHO. Ostrich is a very lean meat in general, over here you will find that ostrich sausages and ground ostrich often have lamb fat added to make up for the leanness.

I'm really surprised. I've had ostrich many times, mostly at a Mexican restaurant prepared like carne asada or strip steak. Then a coworker who had an ostrich farm gave me about 10lbs of meat and I made jerky with it. Might have been the best jerky I ever made. Sorry you didn't like it, but I haven't tasted the strong game flavor. Or maybe I had it with so many other flavors I didn't notice. I enjoyed this video nonetheless, thanks.

Could it have been a clash with the protein and the rub? Maybe try it again with just salt and pepper?

it is recommended to use a lot of spices and cook as a regular steak... There has to be more tests done here! 😀😀

Thank you, this seems interesting I gotta try it. Hey Ninja, I just unsubbed from Guga's channels today because I was pissed off about him being sponsored by a company I hate (raid the bad mobile game) even though I loved his content a lot. I just wanted to let you know, since your channel is growing super fast, please be careful with whichever company sponsors you. There are many that are good, and some that are terrible. Sponsorships are important for keeping the lights on of course, all I'm saying is please do your research on which company to choose for sponsors. I had been a fan of Guga for a while but I had to say goodbye today.
