Pesang Bangus with Bok Choy / Milkfish in Ginger Stew / Pesang Isda Recipe
• How to Cook Pesang Ban...
Cooks in less than 30 minutes. Pesang Bangus or Milk Fish in Ginger Stew is a simple yet light-tasting and healthy Filipino fish soup recipe. The fish is simmered in ginger, mixed with cabbage, bok choy (or pechay), potato, and other vegetables.
(Note that aside from Bangus, other fishes like Tilapia, Lapulapu, or Maya-Maya may be used.)
INGREDIENTS
1.5 kgs. milkfish / bangus
8 cloves garlic / bawang
2 large onion / sibuyas
5 medium tomatoes / kamatis
3 large potatoes / patatas
1 medium luya / ginger
½ kg. bok choy
1 large radish / labanos
1 medium cabbage / repolyo
3 pcs. Chili green pepper / siling haba
Rice flour / glutinous rice
150 grams Tomato paste (optional)
2 pcs. Fish bouillon cubes
3 tsp. ground pepper
2 tsp. peppercorn
1 tsp. salt
2 tbsp. fish sauce/patis

We made this very first episode as an instructional video, with consideration to those who have zero knowledge in the kitchen. We cannot assume that all those who are watching us know everything. Meron nga dyan di pa marunong mag-prepare ng ingredients. There are beginners who are willing to learn from A to Z. We must not exclude them from learning what we know. I used to teach in College. There were fast and slow learners. I cannot just leave the slow learners "unlearned" at the end of the sem. Dapat lahat matuto. Education must be that way. Sharing. Have a great day! 🙂

Sorry for replying so late, Dhang. I just had my left eye treatment last week after being diagnosed with Posterior Capsular Opacification. If you would notice, 1.5 months na kami delayed sa video uploads because of this condition. Di ako makapag-edit because of this visual disability. I have more than 25 recipes to edit pa. Oh! Yes, napakahaba ng video inisaisa ang bawat sangkap it's boring pero gusto ko yong mga gulay. The fried bangus should be added after adding the potatoes then when it's already boiling idagdag ang mga green leafy veggies. Thanks for sharing. 🙏

Hi, Marissa! Thank you for posting your thoughts. You'll be happy to know that (as per our bloodworks last October) our lipid profile levels are normal. Cholesterol, LDL, HDL, VLDL, trigly. We use vegetable oil for frying and EVOO for sauteing. Cheers!

Thanks for posting your thoughts, Ella! It sure is. While our tagline is "Our Wok, Our Style," you can try it for yourself and just adjust the ingredients to your taste and liking. While others say this recipe is oily, it actually is otherwise. Whenever we cook chicken, we take all the skin off before it reaches the wok. We use both vegetable oil for deep frying and EVOO for sauteing. We never use MSG and MagicSarap. We prefer herbs and spices. If you happen to cook this with your own version/style, let us know so we could also try it. Good day! 🙂

The Promdi Kitchen aims to include those who do not even know how to prepare the ingredients. We believe in being "inclusive" in the aspect of learning. We cannot assume that all people know the rudiments of preparing food. Learners vary.

Hello, Nora! Thank you for your suggestion. The Promdi Kitchen would consider improvements in the future. As for the audio, you may consider adjusting the volume from your pc or fone. 🙂 We use vegetable oil for frying and EVOO for sauteing for health consideration. As per our October bloodworks, levels of our Lipid Profile, including HbA1c are normal. Thus, we are healthy. Good day! 🙂

We improve according to our taste and preference. Kung napabsin nyo pong madaming veggies at may mga sangkap na hindi nyo ginagamit sa inyong Pesa, yun po ang inyong version at amin pong ginagalang yun. Bagama't magkakaiba, sa mga pamamaraan din po na yun tayo natututo. Imagine kung lahat nalang ng Pesa ay parepareho ang pagkakaluto at wala tayong choices? Mauumay tayo at mawawalan ng gana kumain. We hope this enlightens. 🙂

Thanks for commenting, Jayson. If you want more bangus, you can add more of it. Omit pepper, if you don't like it. We prefer more potatoes, thus, we added more potatoes. Madami kami mag-pepper because of its health benefits. Yun din ang hanap ng aming taste buds. To us, black pepper (whole or ground) is life!

Hi, Amelia! Recipes are evolving. Sa cooking, may tinatawag po tayong innovation. Kung ang lahat po ng Pesa ay parepareho, wala po tayong mapapanuod na ibang version na gaya nito. Madami na po kaming natikman na iba't ibang version ng Pesa na bawa't isa ay may iba't ibang ingredients. We are open to the idea of tasting them even if they differ from what we do. We never question the person who cooked or prepared the food kung may ingredients syang idinagfag or ibinawas mula sa traditional recipe. What we only do is appreciate and acknowledge the person for coming up with a different version, far from usual. Hope this enlightens. 🙂

Hi, Lolita! We use vegetable oil for frying and EVOO for sauteing. What you thought to be oily was otherwise. Isa po naming style sa cooking yan para hindi madurog ang bangus sa pag-gisa. Good day!

Hi, Tina! The oil we use for sauteing is EVOO, thus, no problem in terms of health and wellness. As for the saltiness, hindi naman halos malasahan. What we use are herbs and spices, no MSG and MagicSarap. Yes, you may try it with a little tweaking here and there. Adjust the ingredients according to your taste and liking. Thank you! 🙂

Hello, Gloria! Batay po sa ilang pag-aaral, ang mga pagkain na mayaman sa olive oil ay pumipigil sa diabetes, dahil binabawasan nito ang mga levels ng glucose, LDL (low density lipoprotein) at triglycerides. Dahil sa epekto nito sa kolesterol, pinipigilan ng olive oil ang serye ng mga sakit na napakadalas sa mga pasyenteng may diabetes. Maaari nyo pong ikunsulta sa inyong doctor. Ako po ay hypertensive. Kami po ng partner ko ay mataas ang levels ng cholesterol, VLDL, LDL, at trigly noong Jan 2021 bloodworks. Mula noon, gumamit na kami ng vegetable oil at EVOO (mula sa nakagawian naming coconut oil). Batay sa huli naming bloodworks nung October 2021, normal levels na lahat ang dating mataas. Nasa pag-control na din po ng mga kinakain ang ikalulusog ng ating katawan. Kung inyong mapapansin, tinanggal na din namin ang balat ng manok bago pa man ito iluto. Maraming paraan. Dapat lang matutunan natin baguhin ang nakagisnang pagluluto na ayon sa ating pangangailangan. Idagdag pa dyan ang physical activities sa araw araw. Ingat po at magandang araw! 🙂

Hi, Gloria! Nauunawaan po namin ang nais nyong ipunto. Extra virgin olive oil po gamit namin sa pag-saute. Vegetable oil for frying. Normal levels naman po cholesterol and triglycerides namin after ng last bloodworks namin nung October. 🙂 Mula sa amin dito sa The Promdi Kitchen, salamat!
