How to Cook Plain Boiled Rice | Chinese Style Cooking Recipe
Welcome to Xiao's Kitchen. My name is Xiao Wei, ever since my Mother taught me how to cook at an early age, I have always had a strong passion for Cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and pick-up new Asian/Chinese recipes.
Ingredients:
300g Rice
1 Litre Water
1 Tsp White Vinegar
Method:
1. Wash rice in a bowl with cold water and then discard the water
2. Rinse the rice several times until the water runs clear
3. Place the rice in a saucepan, add vinegar and a litre of cold water, place onto the cooker
4. Turn on the heat to high, bring to the boil
5. Once reaches to the boiling point, leave to boil on medium heat for 2 minutes - stir once to avoid sticking
6. Take a grain of rice to test by squeeze with your fingers, it should be little soft outside but still hard in the middle
7. Tip most of the liquid out so you are not able to see water above the rice level- this is important
8. Cover the pan and cook on the lowest heat for 10 minutes - do not remove the lid or stir during this
9. Remove the lid after 10 minutes and turn off the heat, stir and fluff the rice
10. Place into a dish and ready to serve

I can't wait to try the rice! I'm 16 year old and I have never made white rice so let's see how it goes Update: I spilled water everywhere but it's a good thing bc my mom is not home😅 10 mins later it cooked but it's soft and I'm not sure if that's how it's suppose to be but other than that it taste good with some sauce !!!! I JUST DID IT! For the past 22 years I had been making boiled rice for my Chinese meals in the same 3-piece plastic Rice Steamer, which gave up the ghost one month ago. I tried making it in a regular pot, but mmm... not so good. Then I found your recipe last night and went for it today. OMG ... perfect bái fàn! (In all my years I had never heard of adding that Tsp of White [rice-] Vinager. Incredible results.) Thank you for sharing; I shall be indebted to you forever, and will sing your praises at every meal.

I literally can cook a million things except rice I’ve tried a million different ways same ppl say cut off heat and leave lid on for 10 min. It’s usually always mush. I’ve found toasting rice works well but not sure that’s a good idea for whit rice.

mushy rice probably means you are overcooking it, it might also have to do with the type of rice you are using

This method is somewhat complicated, in India we cook rice in simpler ways. You can just drain out the water after the rice is done to your preference... keep checking. No need for vinegar and half cooking and draining and keep simmering, etc. In India, we even use the pressure cooker to cook the rice, but in that method, it's more starchy and less fluffy. Of course, in India you get much better rice varieties. Some of them are long grained and fragrant and cook in very little time....basmati, jeera rice, govind bhog, etc.

I measures water using my knuckles as scale...if water from tice surface reachers ur second knuckle then water is enough to cook whole quantity of rice ....

My suggestion would be to check out Julia Childs on YT for the basics. And Americas test kitchen when you want to know more. Those aren't the only cooking shows that are amazing but in my opinion they are the best. And my suggestions should matter considering I am an ex head chef/ chef. Keep it up!

I followed those directions down to measuring out 300g of rice by weight, and testing the rice grain for texture. It still came out gummy and sticky. I guess I'm a rice failure.

Use rice and water in 1:2 ratio and do not spill any water while cooking. Cook only in low flame and stir it for every 5 minutes, within 20-25 minutes the rice will be ready to serve
