Thai Rabbit Delight Recipe
Ingredients
For the Rabbit
1 kg rabbit meat, cut into bite-sized pieces
2 tbsp vegetable oil
2-3 tbsp Thai red curry paste (adjust to taste)
400 ml coconut milk
1 cup water or chicken broth
2 kaffir lime leaves, torn into pieces
1 stalk lemongrass, cut into 2-inch pieces and bruised
1-2 small red chilies, sliced (optional, for extra heat)
1 bell pepper, sliced (optional, for color and flavor)
1 tbsp fish sauce
1 tsp sugar (palm sugar preferred)
Fresh Thai basil leaves for garnish
Fresh cilantro leaves for garnish
For Serving
Steamed jasmine rice or sticky rice
Lime wedges (optional)
Instructions
1.Prepare the Rabbit
Rinse the rabbit meat under cold water and pat dry with paper towels. Cut into bite-sized pieces and set aside.
2. Cooking the Rabbit
Heat the vegetable oil in a large pan or wok over medium-high heat.
Add the rabbit pieces and sauté until lightly browned on all sides. Remove from the pan and set aside.
3. Making the Curry
In the same pan, add the red curry paste and fry for 1-2 minutes until fragrant.
Pour in the coconut milk and stir well to combine with the curry paste.
Add the kaffir lime leaves, lemongrass, and chilies (if using) to the pan. Simmer for a few minutes to let the flavors infuse.
4. Combine and Simmer
Return the rabbit pieces to the pan and stir to coat them with the curry sauce.
Add the water or chicken broth, fish sauce, and sugar. Stir well.
Add the bell pepper slices, if using. Simmer the curry gently for 15-20 minutes, or until the rabbit is tender and the sauce has thickened to your liking. Adjust seasoning with additional fish sauce or sugar as needed.
5. Garnish and Serve
Remove the lemongrass stalk and kaffir lime leaves from the curry.
Garnish the dish with fresh Thai basil and cilantro leaves.
Serve the Thai Rabbit Delight hot with steamed jasmine rice or sticky rice, and lime wedges on the side.
Tips
Adjust Spiciness For a milder curry, reduce the amount of red curry paste or use less fresh chili. For more heat, add extra chili or use a spicier variety of curry paste.
Substitutions If rabbit meat is not available, you can substitute with chicken, pork, or beef.
Vegetarian Option For a vegetarian version, substitute the rabbit with tofu and vegetables like eggplant, mushrooms, or zucchini.
