A few days ago my 14 year old son butchered his first rabbit. I had no idea how to cook it. After letting it hang a few days, I followed this recipe today.... Incredible! The whole family was so impressed. Everyone was skeptical about eating a bunny, but we're trying to be supportive for my son who is a bit of a wild man. Now we're all on board!

I like to put half a half a dozen or so black olives in a rabbit stew - as my French mother and grandmother would do. Adds another level of flavour and a bit of colour. It doesn't end up all tasting of olives though so don't panic! And perhaps some dried cep/porcini mushrooms. Now off to find me a rabbit!

Scott, huge fan here from the US. Love the videos and some of my families favorite recipes are yours. The beef stroganoff (we make it with whitetail deer) is incredible. Quick question re rabbit recipes. Do you always use wild rabbit/hare or do you ever use home raised rabbit such as New Zealand Whites, etc? Here in Minnesota qe have wild snowshoe hare and cottontail rabbits. Both can make excellent table fare but both are tough and need to be cooked appropriately.

Instead of using gravy granules, couldn’t you just leave the lid off for the last 20/30 minutes of cooking to allow the stew to reduce? That way you don’t ruin all those hard won flavours by masking it with Bisto! I don’t know how much you used, is it literally just a pinch? Coz it’s a pretty salty, powerful flavour is old Bisto. That or a buerre manier which you mention in the video. Just a thought. Looks absolutely stunning though mate.
@JoshuaGonsalves3 жыл бұрын
Use the gravy granules. Or leave them out. It’s your choice really.
