To anyone who looks at the price of short ribs, and is scared away, you could follow this recipe step by step, disregard the bone instructions, and use a chuck roast instead. Admittedly, it won't be AS good, but it'll probably be $15-25 cheaper. This recipe would be awesome with a pork loin, or bone-in chix thighs too, just use chicken stock instead of beef.
