I usually do mine in the oven, I use to hit it with heat right away then cook it slow, but this year I saw a KZbin video from a French guy that advocated cooking slow till 120, pull it out, let it rest for 45 min then hit it high, and it came out perfect. I feel you get more control over it cooking it slow first.

Got question... What are your thoughts on bark on your wood or no bark on your wood

I usually leave the bark on unless its been seasoned enough and it easy to come off. Ive used it to help start the fire too. Thanks again for watching and commenting.
