How To Cook Tomahawk Steak at Home

The Tomahawk Steak is my favorite 'WOW' meal! No matter how many times I cook them, I'm always blown away by the size and delicacy that comes with cooking this huge cut. You HAVE to try this recipe! Let me know in the comments how it turned out!
Ingredients:
Tomahawk Steak (Steak in Video is 4lbs)
Seasonings:
-Kosher Salt
-Cracked Black Pepper
-Garlic Powder
-Paprika
Garnishes/Aromatics
-Rosemary
-Thyme
-Clove of Garlic
Garlic Herb Butter:
-Salted Butter (Half a stick)
-Minced Garlic - 2 Tbs
-Chopped Herbs - 2 Tbs (I use whatever herbs I am using with the steak)
Directions:
-The night before, heavily salt your steak with kosher salt, making sure to get the edges as well. Wrap it back up and put it in the fridge overnight.
- 1 hour before cooking, pull your steak from the fridge and let it rest at room temperature until ready to cook.
- When its cook time, preheat your oven to 225 degrees.
-Season your steak with a healthy layer of seasonings: Kosher Salt, Cracked Black Pepper, Garlic Powder, and Paprika. Make sure to get the edges as well.
- Place your steak on a wire baking rack, then place your aromatics on top: Spring of Rosemary, Thyme and a crushed Garlic Clove.
- Cook at 225 until the internal temperature of the steak hits 130 degrees. (If you do not have a digital thermometer to leave in while cooking, you can start checking with an instant read thermometer after 45 minutes. Check in the thickest part of the ribeye.)
- I take this time to make my garlic butter mixture, that way it is ready for showtime.
- When the steak is ready to remove from the oven, preheat your searing surface on high heat. Make sure that surface is smoking. (I used a cast iron griddle, however you can use a really hot grill, or even the bottom side of a regular cast iron pan.)
- Baste your steak with the garlic herb mixture, then place it butter side down on the searing surface. Apply the garlic butter to the top part of the steak, and sear each side for 1 minute!
- Remove from heat and LET IT REST for 10 minutes before cutting in.
- Now its time! Cut in to this bad boy and let your mouth water with wonderful smells and tastes this steak provides.
- Enjoy!

This method is how I do my regular ribeye too. I'll heat to 120 internal in the oven and give it a hard sear in the cast iron. Magnifique

Thank you so bloody much for making your video clear & concise! I've cooked one Tomahawk before and I tried reverse searing it on the grill prior to the oven, but I didn't use a rack. Learned how to cook one of these behemoths even easier!

What temp would you recommend for a 3lb ? And I what internal heat would be a good medium well?

I’d still do the same cook temp, and internal temp for medium well before the sear would be around 140-145.

Would it be better or worse the treat the meat with olive oil? We do it for grill but not sure if it suits oven cooking.

I saw another chef video on this, he said no because it acts like a barrier between the meat and salt and interferes with the salt doing its job.

I cooked a 3lb at 225, it took 2 1/2 hours to get to 130 ??? Don't know how a 4lb cooked in half that time. I would probably have liked it a little more done but I couldn't wait any longer. All in all this was a great steak, it was so juicy and flavorful.

Just curious where you are getting a Tomahawk Ribeye that is this big? Some of us have to use an electric stove and do not have a cast iron skillet.

Hello! I have some local meat markets/butchers I get them from. But I do find the occasional one at publix or kroger too:)

And if you dont have a skillet to sear, take the steak out, turn your oven to high broil and let it preheat first before putting that steak in for 1 or so minutes on each side. Just watch it carefully or you’ll burn it cause the searing happens quick!

@@KennasKitchen Oh before I forget I bought a Lodge carbon Steel 14 inch fry pan and an induction hot plate. I just need to figure out how to ventilate the smoke so my apartment doesn't look like a casino at midnight and constantly set my alarm off. I have seen some reviews on this skillet and I think it will do great for a steak like you have. Thanks again for all of your videos and cooking tips.

How long do u put the tomahawk in the oven for sear? Considering I don't have the thermometer

It’s hard to say, because it depends on thickness. If you have an instant read thermometer, star checking after an hour. If not, I would say about an hour and a half at 225 will get you to 120 degrees

Hi Kenna, just wanna let u know the steaks went terrific! So good with the method I learned from you. The dinner spread was just splendid 😋 I made 2 tomahawks and one piece was just cooked with medium rare just how I like it, the second one was a bit smaller than the other, so it's just cooked to medium well I think. Overall, the meat was hella tender and the kosher salt really helped to elevate the flavour! We can't go out due to lockdown in my country so a nice birthday celebration at home is way to go x

If you dry brine, should you season with salt again before beginning the cook?

Depending how long and how much salt you used on your brine. I usually do unless it’s still visible on the outside!

@@KennasKitchen I used diamond crystal kosher salt. It’s been dry brining for almost 24 hours. I made sure to coat the entire tomahawk. Would a small layer make it too salty?

@@oalha001 honestly that is up to preference. If you feel like you already did a lot of salt, leave it off. But if you like salt, like I do, do another light layer with the rest of your ingredients, and then give it a go! Worse that happens is it’s a little salty, and you have to cook another tomahawk steak to get it right 😏 win/win

I have the Samsung dual wall oven flex zone, and it has the convection option as well. I really like it so far. During this particular bake, I didn’t use the convention part. Just normal bake!

I buy them at meat markets, such as Wilkes or Pattons! But sometimes Publix has them on sale. Also, this cut is the exact same as a bone in rib-eye, which you can usually get at any grocery store. The only thing different is it doesn’t have the long bone attached! Actually cheaper per pound as well because your not paying for all that bone!

If I remember correctly roughly an hour and a half...but I really suggest a meat thermometer to cook to temp rather than timed cooked for larger cuts like this.

The way she's comparing that meat 😆. I just found one of these things on clearance in the walmart meat section...no clue what to do with it 😆. I'm a bit further in the clue section now. Thank you. Was $40 reduced to $20...I wonder what this cut would have gone for 2 years ago.

What do you have? I have used a cast iron, flipped upside down on top of a fire before to sear the steak!

Hi there!! Us Americans love things in large quantities and the tomahawk is no different. However this was a massive cut from a reputable butcher. They are normally around the 2lb range! And I’m a southerner 😘

Yes they are!! But I don't think there's any harm in giving them a piece of meat thats been seasoned and then cooked, right? I think its just like raw garlic in excess that can be dangerous.
