Is there a way to make this pattern bigger with 100% cotton yarn and size 5 hook? I am new to crocheting and trying to learn how to increase the size of my projects without sacrificing the yarn I prefer to work with.

Unfortunately that would require a complete pattern change. Requiring adding several more rows, increases and decrease stiches, to get the size you want. Which would require a lot more yarn, especially if using a worsted cotton yarn.

Just curious how many single crochet's should you have at the end of row 11 before I go any further.

The pattern says that you should have 56 sts at the end of row 7. So for rows 8-11 there are no inc or dec sts, so you should still have 56 sts at the end of row 11. I hope that this was helpful. 😁
