This is Chinese salted egg yolk. My hometown used to be a fishing village and fisherman wife's uses egg white for fishing net repair and the the leftover egg yolk will be salted, dried and sold. Whenever my mom was too busy cooking dinner she will steam salted egg yolk with rice, it was my version of comfort food.

My family is Ukrainian, and we used egg white mixed with wax to repair fishing net. We would mix them together, then coat the ends of the broken net and tie them back together. it would make them extra strong once tied.

Great video and very interesing! One bone to pick: she says the pasta with cured egg yolk crumbled over it is "kind of like a vegetarian carbonara", but the egg yolks are treated with bonito, which comes from fish, so actually the dish would be pescatarian, not vegetarian. Just a quibble.

chinese have the salted duck eggs, and people take the yolk part and put them in congee or stir fries. most common ways are using water and salt as brine, or yellow sand and salt.

More like shoyuzuke. Chinese salted eggs keep the shell. Whereas shio or shoyu zuke cures the egg yolk directly in salt or soy.

Shoyozuke is not specified of what to be pickled in soy sauce, but yes they do pickle egg yolks. Yet they don't solidify it.

I love the idea of using dried fish in vegiterian food. Would it work switching the bonito for bacon? I feel that bacon has a better flavor profile for vegitarian dishes.

Put bacon into eggs would make the eggs no longer vegetarian? I was confused because the addition of bonito makes it no longer vegetarian, just pescatarian. Which, is fine, it's just not vegetarian. You can obviously cure egg yolks without bonito to make them vegetarian

@@PsychoEkan the functional difference is that fish eggs will grow into fish, where as chicken eggs are just chicken periods. They're unfertilized eggs. Fish eggs are fertilized and therefore contain animal life

It's probably fine to keep it unrefridgerated. Bacteria has a hard time growing on salt and sugar. You could use it for brine too. Maybe add more salt to increase the ratio.

considering that a chickenegg is also an animal product it depends on what type of vegetarian you mean... some eat fish poultry milkproducts honey and eggs. people just have to decide for themselves where to draw the line.

A yolk is still a yolk so it wouldn't be vegetarian unless you didn't have the eggs at all. Likewise with the bonito, which is a fermented fish flake (unless you are pescetarian)

This is right up my alley! Especially when she broke out the chive blossoms! I don't know much of anything about cooking, I just use what i have on hand and try out what I think looks/tastes good. I made an omelet with chive from our garden and put the blossoms on top, it looks really impressive! Also, chinese moon cakes sometimes have cured yolks inside. I always wondered how they made them, so this is great. Personally, I don't like yolks on their own but using the cured version in cooking sounds great.

In Indonesia we use duck's eggs and do the same process without bonito for a whole egg. We call it "Telur Asin". The more we keep it after the preservation, the more orange and oily the yolk is. It tastes delicious and also my favourite!!

try duck yolk next time, it's better. And yes, salted duck egg is very similar to what you do. we put the salted duck yolk in the moon cake or use it as a coating for tofu or prawn while stir-frying it, and base on it looking, we call it 金沙(mean gold sand) something

You can still make your egg white omelettes! You just have this cool yolk creation as a salad topping, or in a bomb ramen! (real ramen not the dehydrated stuff). I prefer a Sous vide egg in my ramen, but this could change that.. need to try it!

A lot of chefs don't throw it away even if they don't intend to use it in an actual dish. I know she had the shells in the white but most chefs use it as a clarifying solution for broth. Mix both the whites and shell with some ground meat or no ground meat (same type as broth, chicken or beef) it's optional though and then add it to the broth and later as it simmers it absorbs the impurities. Then you poke a hole through that floating meat raft and pull the mostly clean broth out. Google it and check it out. It pulls a minor amount of impurities for the amount she has, but makes the broth much cleaner for serving.

Raw eggs are pretty safe depending on where you get them (mainly what country you're in)

ideally the curing process should make them safe to eat. Cured fish (like gravlax) for example isn't dehydrated/baked after curing.

This really similar to Chinese salted eggs, except that for those, the egg whites are so salty that it's wasted. This is a really good way to salt the eggs, but add even more flavour and save those egg whites

This ferment is a creamy, rich and deliciou.The texture and flavor similar to a soft stinky cheese than of egg yolk. From "The Book of Miso" , by William Shurtleff & Akiko Aoyagi. It’s fairly straight forward: bury egg yolks in miso, wait, recover yolk

You could reuse the salt n sugar mix, as bacteria will live a hard life if they are going to try and survive of salt and sugar. Some ovens can go to low temperatures, you'll just have to test yours out first. Jesus loves you ;)

Preserved egg yolks. Cause eggs spoil easily after a few days, with this method it can last for at most a month. Also, culture, curing eggs has been part of Asian cultures. East Asia and South East Asia. It can be used savory or sweet inside pastries. Not sure if this is also popular in North, West, or Middle East Asia.

+Love Castle bay leaves are literally in every grocery store and bonito flakes are in probably 50%. Also, there was an oven temp/time alternative to the dehydrator. You suck at talking shit.

Usual standard shelf life of salted items are a month. Of course you can go for the aged and salted, but thats a whole different story. Almost the same technique to get the 100 year old egg.

Bonito is not vegetarian. It may look like wood, but it is in fact skipjack tuna. For a more vegetarian friendly option, use smoked paprika and MSG.

some people don't seem to understand that the eggs we get from the supermarket are infertile and never where going to hatch which is why a lot of vegetarian diets accept eggs as part of them. so YES vegetarians can eat eggs. some choose to because they have other food allergies and can't eat nuts, soybeans, or other sources of protein and fat that most vegans and vegetarians turn to when they choose to stop eating meat. ALSO she said the bonito flakes are her PERSONAL touch. you don't have to use the bonito flakes if you don't want to geeze. hell you could probably do this with a cube of tofu if you don't want to eat the eggs she was showing you how to cure something she never said you had to do it her way.

Bonito is made with dried fish and therefore not vegetarian. So if you are a pescatarian or a pesco-vegetarian then this dish is fine, but if you don't eat any meat including fish, then omit the bonito.
