As always, freeze your loaf for 60 minutes before scoring. Dust with white rice flour or black cocoa for contrast. Do your decorative score, bake the loaf for 7 minutes, then do the expansion score!

Most home sourdough techniques I know of use a dutch oven to create a high steam environment for the first 20-30 minutes of the baking (since home ovens don’t have steam injectors)…Im curious about your baking process since you are rescoring at 7 minutes. Do you use a dutch oven? Does the steam escape at 7 minutes? Thanks!
