Is there any way to do this without banettons? I'm frustrated with them cause my dough stuck and they very soon developed some fungi o something like that. And they're expensive.

Себестоимость муки только от 50-70 рублей на этот хлеб, а времени на натягивания и ламинирования уходит много, ты от хлеба буквально не отходишь. Такой хлеб дешево не продашь. Я что заметила, что мой ребенок перестал болеть. Курсы я, конечно, не оканчивала, но красиво сделать могу. А после этого видео будет еще круче.

After spending time doing beginner recipes of a much less hydration, I have plucked up the courage to try this. So far I have done the 1st stretch and fold. I’ll let you know how I get on. Edit: 😮 I either overproofed it or over hydrated it because though I got a decent oven spring, the crumb is too open for my liking.
